I make chicken broth in my instant pot with mushroom stems, chicken bones and skin from a rotisserie chicken, cellerey, carrot skins, onions, and seasoning. Add a bay leaf or two. Cook for 4 hours, add salt and pepper if desired.
After, I strain the broth. Add carrots, corn, cellery, and mushrooms. Cook 3 to 5 mins, then add the rotisserie chicken.
Trust me, it's so good.

@@UniquelyGeeky No I do not. The bones open up and the marrow comes out. You realize it's not uncommon for restaurants to cook broths overnight right

Hi Rick. Pro Tip: frozen vegetables are already cooked, so you can add them at the end - AFTER pressure cooking. They will warm through quickly in the hot broth and won’t be mushy. ❤️
Rick, you should try the Better than Boulion it’s a base that comes in a jar and you mix it with water. 1 tsp per 1 cup of water, it’s amazing! It comes in several flavors and stores in the refrigerator.
You have to be careful with that stuff, it's extra strong.

I swore I never would. I finally gave up The Ghost and got an 8-quart very nice pressure cooker. I have made pea soup and I'm going to make chicken noodle tomorrow. Because the way my mother passed away my life has gone from bad to worse and I think I'm coming down with something. I have a tip at the very end when it's cooked. Squeezing some fresh lemon juice. It makes the soup tastes like it's sparkling in your mouth you don't want to add too much you just want to bring it up to the next level. :-)
Rick thanks so much for a great video...the idea of fixing chicken noodle soup sounded good to me... so I went to the grocery store and picked up a couple of things... my PC had a soup setting on it... I selected that and it said 16 min..... I stopped it at 7 minutes of cooking like you did... I figured if it was not enough time I could continue with more.... You know your stuff because 7 minutes cooking was perfect...… thanks so much for your wisdom.....

Made homemade chicken noodle soup not to long ago. Used chicken with bones from butcher water and chicken broth. Added just carrots, celery and spices. Noodles. Yum. Except had a little extra work when done had to fish chicken out and take the bones out and put just the meat back in. Make mine a little different but like you said make it your own how you like it. Cooks so quickly. Yours looks delicious my mouth is watering for chicken noodle soup. Thanks for sharing.
I love pressure cooker soup it looks great! I like to add a pinch of dried thyme (1/8 of a teaspon) for added flavor.

Have a Cosori 6qt and make a very similar chicken soup. Start with a warehouse club rotisserie chicken. Once you've eaten most of the meat off it, put the bones and drippings and skin in the pressure cooker with a bunch of water. Cook. It renders down any flavor and meat bits. Remove the bones. Add veggies and noodles or rice. Cook again. Bam. Chicken soup or chicken and rice. It's very tasty and super efficient. You'll get your money's worth out of that chicken.

I got almost those exact ingredients to make "soup" today. Chicken broth in a box and frozen peas/carrots. About the only difference is that I'm using dry pasta (spirals) instead of egg noodles, since I have them already. I like egg noodles the best though. Always a good fast (in pressure cooker) meal or side.
You only forgot garlic! ❤️ but, this is the only way I make chicken soup 🍜
Looks great, Rick! I had to wait a few days to get caught up on videos. The nasty flu bug got hubby first and then me. Might try making your soup soon.
I'm making soup for dinner tonight, trying to use what we have in the house before we shop again, so hamburger, tomatoes, frozen veggies and some noodles ... going in to beef broth. Hope it tastes good, have never made soup in my instant pot pressure cooker ... keep your fingers crossed for me. Thanks for sharing Rick.

Sad so for those new to pressure cookers...don't bang tools on edge of pots..use metal tools carefully..I say use wood or tefflon (sp) only..

I add a good amount of garlic, one bay leaf and some ground thyme. Pepper and I reserve the salt for when it's done.

Mealthy is a brand that makes pressure cookers and air fryers, etc. They are coming out with a new air fryer lid that turns any 6 or 8 quart pressure cooker into an air fryer. Kinda like the Ninja foodie, but much cheaper.
They might send you one early for free before they are released if you reach out to them. Some other youtube cooking channels have already got one to review.
You run out of garlic? When sick, garlic and chicken is a healing combination. I can't cite a source at the moment. Just add garlic to your chicken soup - you will thank me for it later.
Plus, you want to keep the vampires away. Hahahahaha.

But how would you know how to set exactly to time. If the soup feature is set to 25 minutes but you did it in 7 minutes .
I learned from using pressure cookers for many years.
If you taste Swanson broth side-by-side with, say, Kitchen Essentials, then I don't think you will buy Swanson anymore.
I put ketchup in my chicken soup, as does my mom and her parents.. Don't knock it till ya try it :-)

Back when I was young and foolish, I would have definitely knocked it before I tried it. It doesn't _sound_ right. But, I have learned over the years that odd additions like ketchup in chicken soup can be that magical secret ingredient.

How much do you add to it? Do you cook it with ketchup or do you add it after it’s done?
@@UniquelyGeeky I have never measured it.. I would guess a tablespoon worth.. Depends on how much soup you have... Add a bit, then add more if necessary.
