I am 71 years old and my husband is 77 years old. Needless to say I am the caregiver. Your videos have been so helpful to me. Thankfully I have a freezer in the garage and I have been filling it with your recipes! I do have to adjust a few things due to tender tummies! If you want your blueberries to remain suspended in your batter, rather than falling to the bottom, toss them in a little bit of flour before mixing them in. You'll get a much better distribution/ratio per muffin.

I’m 80 years young, still do all our meals from scratch and my husband, also 80, grows a wonderful organic garden every year which provides our whole family and many friends with beautiful produce all summer and into early fall here in So Cal. Thank you for all you share with us, I truly admire you and wish all the best for you and your precious little family. You're too sweet... thinking of your friend. I would love to have a friend like you. At this point in my life I would just love a friend period. Love watching your videos. I'm 70 years old and I just lost my only daughter this past September. Life has been super sad and lonely for me since her passing. So, I've virtually adopted you as my sweet daughter. When I saw you cutting that basil, I thought it would be a great idea to use your grow room to start herbs in the late summer, so you could have fresh herbs all winter. You could plant them out in the garden once spring comes again if you didn't want to have to keep up with them. A greenstalk herb garden in that sunny, frost free room would be amazing!
I am been married to a plumber for 28 years and he always told me to run cold water when you drain your boiling water to save your pipes!! You don’t want melted pipes!!! Love your Chanel!!

Hi Becky , you always talk about your fondness for caramellized onions, and I recently read a book that suggested adding a pinch of baking soda because onions cook and caramellize faster in an alcaline enviromnment. Brief story I thought you might enjoy hearing. It is truly a small world. I was watching a gaming channel from England, @emmalution, and she was talking about food, and she said that she had learned that nutmeg goes really well in creamy sauces from Acre Homestead! I had to back up the stream to make sure I heard right. I was like hey! She is talking about my friend! Anyway, I am now off to watch this video.

To save on freezer space, I make up a huge pot of carmelized onions and pressure canned them, they are wonderful! I put them in jelly jars so I wouldn't have too much at a time and in works perfectly.
I have to vote for the cooking videos over the gardening ones. There's something cathartic about watching her cook while talking to us.

These I am making next weekend. My sister and brother can sure use a little grace and for me to show some extra love to them. My sister is a widow and my brother is a single man still working with the government and don't have extra time lately to cook a well balanced meal for himself. Eating out all the time isn't very healthy so I know these recipes will be welcomed by both of them.

You have excellent knife skills! I’m older (72) and have an autoimmune disease that makes my eyes very dry so slicing & chopping onions very painful, I use a manual chopping & slicing device I got on Amazon that is very quick and eliminates the exposure to the gases that the eyes water very limited. I love to watch your channel you encourage me to get up and try something new!
I was thinking the same thing about the onions. I get SO TIRED when I chop onions I've learned to only do it in the evenings. The onion vapors make my eyes feel tired even if I'm not physically tired. It's wild. I've always wondered if others experience this.
I just discovered "tearless" onions and gave them a try. I was skeptical but the texture and flavor is the same, just no tears! (I too have dry eyes so getting relief from the burning was very much appreciated).

I don’t know if someone else already suggested this…but you could make recipe cards for tags so that if your friend likes the meal she could recreate it later when life settles down.

How in the hell do you do all this girl? You make me dizzy with all that you have going on. It must take a lot of pre-planning ahead of time. It's very entertaining! You go girl. I would eat all that stuff you are making. It looks delicious. I'm a full time nurse and my husband cooks for my co-workers. I always haul a bunch of food to work so nobody ever goes hungry when they work with me. My husband is recently retired and his new job is feeding my co-workers.

Hi from Australia, wow Becky you did a great job, although my husband and I are not into spices or pepper, I do use them but not overly much, just for flavour not for the heated bite. Your friend is very lucky to have such a generous kind friend like you in there life. I am 67 and used to be like you, but found after years of generosity my kindness was not really appreciated. Although I do still cook for my daughter her oartner and her 5 children, they are my biggest critics and tell me what they love and what they don't want me to make again...I love watching your content, you are an inspiration. It's easy to decrystalize honey. I simply put the unopened jar upright in my oven with the oven light on overnight. In the morning all of the crystals have dissolved back into liquid honey that stays liquid for a very long time. My oven is electric and with the light on it heats up to about 100°F.

You said you thawed your chicken and then you are going to freeze it again? I didn’t think you were supposed to refreeze chicken?
If it's frozen raw, defrosted fully, cooked and then frozen from cooked you're fine

Becky, I love watching your channel. Maybe this is just me, but I would love to see an episode on how you unfreeze some of these meals to eat. Do you pull out the muffin the night before, take it straight from the freezer to the microwave? That kind of thing. I’m especially interested in how you use your glass containers from the freezer. Do you thaw first, go straight from freezer to oven. Like I said, maybe I’m the only one that doesn’t know how to do this, but I would love to learn. Thanks!

Whenever I make lasagna or baked ziti I find that it’s always more flavorful when I season my ricotta well as ricotta by itself is very bland. It takes it over the top! I add an egg, salt & pepper, dried oregano, dried or fresh basil, fresh parsley, and lots of Parmesan cheese.

Hi Becky! When you cook chipotle peppers, they pretty much dissolve because they’ve already been cooked and canned. So you wouldn’t be able to pick them out after it cooks.
If you use parchment muffins liners you never need to spray the liner cups, saving that overflow of spray on the muffin pan. They also leave absolutely nothing in your pan. Life changing.

Hi Becky - I’m from the UK - love watching your videos !! Top tip for when I make cottage / shepherds pie - I grate my raw carrot - cooks quick n easy !! Also good for hiding veggies for my kids - I also add frozen peas too !! Xx
You really need to check out the "Vidalia Onion Chopper" When we need to chop more than a couple of onions it is our go-to. Such a time saver and chops them all the same size.

You've inspired me to make freezer meals. We went from cooking for 4-8 people to 2-3. My partner is not much on leftovers. So now I make a meal for now and put 1 or 2 in the freezer. It's been a game changer. We don't eat out when I'm too tired to cook. We pull a freezer meal. It's helped for my MIL as well. I make her several 'tv dinners' to pop in the air fryer or microwave. She loves them. 😊
Btw.. it's always shepherds pie no matter what meat we use. Otherwise we call it pot pie. Lol

Our secret ingredient for mashed potatoes is evaporated milk.(salt,pepper,butter) simple and perfect. I think it’s good to add the room temperature evaporated milk also because it’s not making the potatoes colder like dairy that is coming fresh out of the fridge, When it’s just going from the potato masher to the table, you don’t want it to get any colder, especially on Thanksgiving. Plus something about evaporated milk is very rich and delicious.

I like to whip my potatoes with a hand mixer. So fluffy no lumps.plenty of butter.

Becky muffin tip: bake first 5 min at 425 then drop temp down to 350 for 10 min. This makes it beautiful with a nice muffin top like a bakery muffin.

I’m 67 and live alone now but I make things like shepherds pie etc and make 6 individual size ones. Eat 1 freeze 5. At the same time I freeze individual portions of mash potato for other days. Nice to just be able to pull something from the freezer some days!

I had Stopped cooking, from Depression, Sorrow/Greiving/Handicapped Leg Busting more AND Self Denial for Control in my life. See? Heaps in my Story! I also went and got Plunked back in my Parents' house and both of them are gone. My oldest daughter is Passed and my Ex. My youngest refuses to Eat anything i cook, but for my turkey or chicken breasts. She has Sensory Issues, so she claims.
My grandsons are both Taken.
No one left but me!
I tend to be on Intermittent Fasting, Daily, for the last 15 years...

Other Channels incuding some of your friends, i went back TO canning and freezing! I still cook very little, about once a week? But now i have my own canned soup, cabage rolls in jars (my own creation), stews, Cream Soup Bases and Fruit, Sauces and Jams again! So between my few cookings? I pop open a jar and am able to eat healthily, with little leg time!!
When i go Shopping? Only half an hour in Store, harms my leg for 2 or 3 days. So it is very precious TO have nutrition in a jar, or only cook noodles and put my sauce, etc!

Cottage pie is made with beef and shepherds pie is made with lamb,but they are both a good tasty meal,so whatever you have you can use,they both look the same when made!xx❤

I like to user scotch in my shepherds pie. It adds a wonderful smokiness to the flavor that is just delightful!
I make a left over Thanksgiving shepard's pie. Line pan with stuffing. Pre bake for the crust to form. Then fill inside with chopped turkey, leftover veggies, (or which ever tastes best together with theses) some add cranberry, but I don't, and gravy. Top with leftover mashed potatoes. Bake I'd say about 375 or 400 until potatoes are firm and golden. If insides are not warm, cover for a little bit longer bake. 😊❤

Crystallized honey is still good. Especially when using in a cooking recipe where it will melt into a sauce. Honey never ever expires!
Evaporated milk works great in mashed potatoes and sugar really brings out the flavor of the potatoes
