Jayne was going to turn on them the moment he got a chance without his being detected. Ariel was probably on his list of planets where he could do it. My guess is that he already had plans to betray them. All he had to do was take some R and R on the planet, contact security, and have Serenity raided while he was still on the planet. His plans were nerfed because Mal states no one is to leave the ship. River reads his intentions and strikes. All the stuff that happens after wasn't predicted by River. I don't think she predicts the future. She reads minds. Jayne ultimately betrays them because he does make it to the planet. The slash across the chest wasn't the last straw. He was just another straw.

For context, River is picking up on Simon's dislike of Jayne. When Jayne dismisses Simon, it's likely he had some intrusive thoughts. River is unable to distinguish her own emotions from those of others she's reading. So also can't control those emotions, so River slashed Jayne...but Simon inadvertently made her do it.
