  • 👩🏻‍🍳 Today, I will make basic, but very delicious Korean vegetable pancakes, called 야채전 in Korean. I will also share some of my secrets about how to make the best pancakes. The many different kinds of vegetables, along with the crispy and chewy batter, makes for a great food. I am very glad to share this vegetarian friendly recipe with you today. Try it someday. 🙂

    Love this recipe, it is very good even without the Korean fry mix (i skipped it because I could only find one brand with MSG). I also used a food processor to chop the veggies perfectly but I had to squeeze out the liquid from the potatoes when I used the processor. I also used eggbeater. My friend's young son loved it and calls it "Pizza" - great way to include veggies for your kids.

    This really calls for a Korean night dinner party. I just picked up the hugest tub of gochujan and red pepper powder I could find. Now to make kimchi and a few banchan and get some Soju! Im absolutely obsessed with Korean food lately. Because I made got the Gochujan today my friend asked if I could make something. He had a pile of veggies that were going to go bad so I made a bibimbap with leftover veggies and sliced pork and an egg on top. Bibimbap is at its heart a leftover veggie saver :D

    When I need to julienne a lot, I use my mandolin with the julienne blade to make quick work of it. I did a carrot by hand today but it was not as neat. This recipe looks great!

    I like to use "Korean brand (Sempio) apple vinegar" but actually you can use any vinegar you like to use for it.

    I love it, i tried to make and since i can't find korean frying mix so i just used cornstarch instead but its still very delicious, Thanks Aeri for this recipe. Next I want to try to make Japchae! :-) keep up the good work and more power! :-)

    I usually add the seafood raw into the batter since they cook really quick. If you are concerned with done-ness, I would cook them andante then add them to the batter with the veggies.

    Agreed, But most people tend overcook seafood anyway which make it overly chewy. Most seafood barely needs to be cooked to be good. It just needs to be acquired from a good source :)

    I would guess the answer to that would be "experience". If you've chopped vegetables for a long time, chopping the way aeri does would be rather easy to do, I'd assume.

    You can make your own Korean Frying mix pancakes at home which has rice flour in it.1.2 cup all purpose flour 1/2 cup rice flour 1 egg, lightly beaten
    3/4 cups cold unflavored seltzer water 1/2 tablespoon canola oil, plus extra for the pan

    Googled Korean Frying Mix which seem to consist of : Wheat Flour, Corn starch, Salt, Baking Powder, Garlic Powder, Onion Powder, Gardenia Yellow(Gardenia Yellow, Maltodextrin.
    If not available, would it help to at least add Baking Powder? Or do you have a recipe for homemade Korean Fry Mix?

    personally I don't like pancake mix (I guess you mean korean pancake mix for jeon..right?? ) because to me it seems like it has own unique flavor I don't like much.. you can use normal flour with some corn starch.. or even just normal flour.. or if you want.. you can add korean pancake mix too.. ^^:;

    You can add raw squid since it takes time to cook the pancake.

    Lot's and lot's or practice, I'd imagine. I'm sure there are also some tips you can loop up online. Having good knives helps as well.

    Raw would be better if I try that. Because cooked squid will harden more when it is cooked again. Just give enough time to cook thoroughly
