This is my favorite way to make onion rings. Shout out to you, man, for including the key spice: smoked paprika. I have fun making three batches... single-drench, double-drench (like you show), and triple-drench. Single drench is nice for folks that like more onion flavor and triple is great as a salad or burger topping.

Try it with some vanilla cake batter homemade with your own extract is best and 2 Tbsp of salt you'll be in love. But I love garlic onion rings as well.
He said "besides a few spices there are basically two ingredients ..." How much more of a disclaimer do you want/need? Most people have the spices they most enjoy on hand. Failing that, if they enjoy spicy foods, they can splash some hot sauce into the buttermilk.
Similar process to making haystacks as well. Use a mandolin to get the onion super thin and dunk in buttermilk, quick toss in some seasoned flour, and fry until lightly GBD.
Try adding the buttermilk to your seasoned flour after you have tossed your rings in the flour mixture. Thick wet batter, and then dip them in bread crumbs like Panko bread crumbs. 😃❤
Those look amazing, Kev, and even though we really enjoy using the frozen ones from Great Value/Walmart that my wife puts in the air fryer/toaster oven contraption and they come out like big, crunchy diner-style onion rings, I just sent her this and told her she should really make these one day!! 😋
