I love the taste sensation of this recipe! But Jamie ... you must, must, always, soak Basmati for at least 20 mins before cooing. Trust me, I've suffered enough rebukes from my old (Asian) mum over the years, and mums' always know (it's for your own good)! I wouldn't dream of cooking without this step!
Few tips: 1) Washing the rice is to remove the excess starch. The starch is not unhealthy per se, but it affects the cooked consistency of rice. Too much starch and it will be stodgy. 2) Soaking the rice achieves much of the same i.e removal of starch, but there is an added benefit of reducing the cooking time since the rice has rehydrated. Minimum soaking is 15 minutes but you can literally go a few hours also. More you soak lesser is the eventual ratio of rice:water while cooking. 3) In India, most rice is aged rice. So it is very dehydrated - that increases its shelf life significantly. If youre using this kind of aged rice, soaking is recommended. But if you don't have the time, you should increase the rice to water ratio to 1:2.5 and sometimes even 1:3 depending on the variety and age of rice. Soaking and cooking rice is a way of reducing energy dependence since it cooks faster. There is no "right" way here. Also, There is a possibility that the rice Jamie is using is simply not as aged as good quality Indian Basmati. If that is the case, not washing - soaking and using 1:2 ratio will work just as well as our techniques. Only it won't be as fragrant or tasty as our traditional stuff.
