      Great cooking without dramatic , but I would put the veggies roasting after a certain amount of time ( let’s say half an hour ) adding them to the chicken roasting . It would have been easier .

    This really resonates as we tend to bring a "kitchen box" to Air BnB's but it only works if it's driving distance. When I fly, I lean on sheet tray dishes or braises to feed the crew (sometimes up to 20 people!)
    Great guidance on making do without all your tools

    Legend! Thanks again Andy. Would be cool to get a masterclass on how you go about presentation for home cooked meals - i always end up heaping everything on to a plate and although it tastes nice, would be great to learn how to make it look fancy too!

    I have a compact kit I take when I expect to cook: two knives, cutting board, etc. A thermometer is easy to bring and a super idea.

    Learning good stuff following you❤. I have always been to impatient to let roasts rest. You explained why, I let my corned beef rest last night and got much thinner and sandwich ready slices. Nice results ❣️ making pea soup with the left overs today. Could you do a short series where you run through really using your main big piece of meat. Like this chicken you are doing. A chicken stir fry with the left overs or sandwiches. Then a comforting soup to finish. There are food shortages world wide, chefs can help people stretch thier food/nutrition budget ❤️

    A tip for checking the heat on the oven is to check the yellow/orange light that comes on when you set the temperature. When the oven has reached the correct temperature, the light goes out.

    Andy you always crack me up when I watch your videos. "Don't use your hands, I can because I have chef hands" two seconds later using tongs to move the potatoes around. I had to laugh. Always love watching your videos. I have cooked many meals that you have uploaded. If I had to choose a favourite it would have to be biryani chicken. I nailed it first go. Everyone thought my wife had cooked it. Thanks for everything that you do mate. Looking forward to hearing about this filming that you are doing in Melbourne. Keep us informed.

    Hey fella, I use a meater thermometer ( shows ambient oven temp) in a baked potato to calibrate the oven setting, used it in me air fryer too, runs 20c above the setting tempt!

      Absolutely agree with this. We normally stay in villas when we go on holidays, but no matter how good the villa is, kitchen is always poorly kitted out.

    This is how I grew up eating. Mom out a meal in the oven kept working. When it was ready the meat tested while the gravy was made then it's ready. Yum 😋

    Chef, love the roast chicken. But I really love fried chicken. I'm putting in a request for a southern fried chicken meal. Mashed potatoes with gravy. Coleslaw. And homemade biscuits.

    I like how conservative you were on the fennel pollen. So many things get ruined by too much fennel, but in small doses it's amazing. Haven't tried the pollen before, I'll give it a crack!

    I just chuck the flour onto the pan and cook whilst stirring for maybe a minute or two then add in little portions of hot water from the kettle until the flour fat mixture starts to get some fluidity too it then I add greater amounts of water until the desired thinness. IDK, saves a dish and gets all the flavor off the bottom of the pan

    Note to self get myself a pair of chef hands and fingers. They tell temp and can handle frying thingie out the oven or pans. Oh yes as well as bandages.

    I MUSat have seen this before because I did this yesterday in an Air BnB in the Philippines 😂 And I thought it was all my own work.
    It went surprisingly well - girlfriend was amazed. And now I know why 😂
