Indian food is from a different planet! I thought… but, with your recipe and clear, complete, easy to follow and see instructions i was able today to make prepare a channa masale from scratch that tastes as well or better than the frozen dishes i had to be contented with so far! 2 tbsp oil
Half cinnamon stick
Half mace
4 cloves
2 medium onions, sliced
Pink Himalayan salt
1 in ginger, chopped
6-7 garlic cloves, chopped
1/2 tsp. Coriander powder
1/2 tsp. Cumin powder
10-12 cashew nuts
2 medium tomatoes, chopped
1 tsp oil
1/2 tsp cumin seed
2 cup cooked and salted garbanzo beans (chickpeas)
1/4 tsp turmeric powder
1/3 tsp Kashmiri chili powder
1/2 tsp garam masala
1/2 medium green sweet pepper
Chopped cilantro leaves
When you cook tomatoes in cast iron kadai and leave it there for sometime , don’t it give an acidic taste?
i started using coconut oil for cooking and frying and even for omlete also.
See that it's compressed virgin coconut oil not the normal one

As I convalescence, I needed something with less spice easy to do
V can add in d final stage ,splutter mustard seed ,dried red chilli , curry leaves and a little ghee & little red chilli powder add to curry .While initial sauting of onion green chilli two or three very good flavour for chole . Also I add lemon juice in d last. It gives a good colour & taste

Nisa, can you share your opinion about the debate on oil free cooking? It seems there is a new thought of 'ALL OIL' being demonized as the enemy of health. I agree about the use of properly processed oil. Oil is important for fat-souble vitamin absorption and cell membrane maintenance. I appreciate your cooking explanations and demonstrations.

It’s nice to see you cook curry in cast iron. Do we have to transfer to a non cast iron right away since tomatoes are cooked in it?
Cinnamon stick, 4 cloves, onions, salt, ginger, 6-7garlic, golden brown color saute, 2tbsp kashmiri chilli powder, half tumeric, half coriander powder, half jeera powder, roast for 30 seconds, add cashews, 2ntomatos add water and cover and coook. Saute till oil release out. Quick mix cool and grind.
Oil jeera , two cups boiled channa, quick stir, tumeric, kashmiri chilli, garam masala, mix well. Grinded mixture and add water as required. Coriander chopped and enjoy 😊

Absolutely one can cook tomato in a cast iron kadai if it's well seasoned.And if the kadai is not well seasoned it will give metallic taste to the food.

Didi, you didn't add black pepper powder along with turmeric powder, which is very important for you.
Red chilies also helps in better assimilation. Hope this helps.

It’s the unrefined,cold pressed oil,using a bull,to churn peanuts into oil.The bull keeps churning the peanuts till it gives out oil,or faints.🤔
