    Your recipe is certainly different from the ones I've heard of. Other use cream or milk for the sauce. And Japanese bacon looks more like regular ham than the flat strips that I see at the supermarkets. It's very timely that I saw your video just now...my mum just made carbonara today as well.

    Yeah., Would expect some angry Italians with those bacon., The japanese part will save you from them at least., There's a Filipino carbonara.,kind of sweet same as filipino Spaghetti

      Actually this is done really well ☺️ and after being abroad I came into realizing that pancetta is pretty impossible to find and guanciale/pecorino is rarer than unicorns. I was in Denmark and I made carbonara with bacon, better than not making it!
      Of course I make it differently but you won't find a single Italian recipe which is the same as another one, and I assure you this is spot on!

    Japanese bacon looks more like what we call ham in the US. Here we would probably use lardon or panchetta for this recipe.

    Delicious! Is it also hard to find pancetta or guaciale in Japan? I'm surprised at how thick Japanese bacon is. It's more ideal because you can just cut it the same way you'd cut guanciale/pancetta.

      It might be pretty hard, because I don't think there are many Asian recipes that use European cured meat...

      Yes! It's pretty hard. Regular supermarkets don't have either of them. There is thinly sliced bacon too but I prefer thick ones because I can adjust the thickness😊

    that's the authentic italian style carbonara! did you use whole eggs and how many? did you include the egg whites? that makes it scramble eggs. I kind of find it hard to make the sauce glossy. how many egg yolks and egg whites did you use?

      he used whole eggs and tempered the mixture with the pasta water so it wouldn't scramble
