I know subbing the bacon is part of the hack and making use of stuff we usually have in the fridge, but I just made this with pancetta (fried separately) and it was amazing! Will be buying pancetta more often just because of this recipe. 😅

Bacon is smoked. That changes the flavor profile. Use pork belly cut into small pieces and render the pieces before adding it to the noodles. The egg is a whole egg. Because carbonara is saucy not thick and gooey. Hold the green onion. That is carbonara. It is very easy to make. Nice hack. I do love Ramen noodles.

The trickiest part about making carbonara is maintaining that balance of having enough heat in the noodles to partially cook the egg and thicken the sauce, but not have them so hot they fully cook the egg. The way the noodles are cooked off the heat for the last two minutes ensures they're not too hot. Once you've got this down, you can try out the original (which is still worth making).

I recommend cooking the bacon in a separate skillet so they brown and have more flavor, but this is ramen carbonara after all, so you're free to do it as you please since it's not traditional anyways

Ni Nirvana, it takes a few minutes for the water to come up to a boil. and bacon is very thin, so yes. The color is pink because bacon is cured with nitrates.

For fresh or dried noodles you need to start from boiling water because you want to gel the starch in the noodles before they dissolve into the water or stick together, but with these bricks of ramen noodles, they're already cooked (they're deep fried as part of the manufacturing process), so it doesn't really matter as you are just rehydrating them. If it makes you feel better you can bring the water to a boil first.

This is not American bacon, it's Japanese bacon, which is cooked and similar to ham. You could use precooked bacon here in the US, but he lives in Japan.

You should really fry off the bacon before adding water to boil the noodles. Boiled bacon tastes gross.
