How to Make MODERN SPAGHETTI CARBONARA Like a Chef

  • Modern spaghetti carbonara is a twist on the classic and while it is a little different from the original, the most important rule remains, IT IS MADE WITH EGGS AND ABSOLUTELY NO CREAM!
    This favourite pasta dish of mine combines egg yolk with crispy guanciale, salty pecorino cheese and pepper to create a super creamy version of the classic recipe.
    Is it better than the original? I’ll let you be the judge this time.

      Carbonara with entire egg becouse you dont waste any food and you dont have to waste time on separating egg yolks 😂

      Once or twice the egg whites started to create lumps in the cream; but I'd say it's a matter of preference, I can imagine that without the whites the cream is smoother and has a more focused taste, but that's really connoisseur level. I used entire eggs plenty of time and it was super-tasty.

    I like that the original recipe uses the whole egg, I think we should go back to this way of wasteless cooking nowadays!!!

    I just wanted to say THANK YOU to Vincenzo for this channel Two days ago made homemade pizza dough yesterday I made pizza I also made a homemade marinara sauce and homemade egg noodles for later this week.     I used your basic recipe with guancaile but with 1 pound of spaghetti and used 6 yolks eggs with like 7-8 tbsp of pecorino romano. Used a mug of pasta water. Came out creamy and delicious!

    I use only the yolks for carbonara, and save the whites for merengue or for a protein smoothie so nothing gets wasted.

    I use the whole egg and the last time tried bucatini for a more robust pasta. Worked perfectly. Pasture raised eggs seem to have bigger, darker yolks for even less temptation to separate them.

    I use one whole egg plus one egg yolk per person.
    Works really well imo.

      I use 2/3 whole eggs and 1 yolk for a small pan of carbonara, when i have to cook a lot of carbonara in a big pan (Wok pan for example since it's big) i use double the amount split over 2 trays/bowls (Or whatever the correct term is) to balance it out with the amount of carbonara that i'm making.. I don't empty both trays in after each other, i throw 1 in the pan then stir it for a few minutes and add the other tray after that.. I also love to put in large amounts of pancetta or bacon (Guanciale is to expensive here) in a big pan, mainly because i love meat and because 70gram of bacon/pancetta is a little bit to low for bigger cooked portions (And because i love to overdo it on the meat/cheese and pepper).

      @@vincenzosplate if you can't find smoked bacon in Australia, try finding a local Serbian community and ask if they have some homemade dried meats for sale, it's a pretty important part of our food culture, cheek bacon is called "obrazina", cheers

    Both recipes are great.
    I usually cook carbonara with a mix of yolks and whole eggs.
    I wisk the whites left to make fluffy apple cakes so nothing gets wasted.

    I've been making it using the modern method, and we use a hack for mixing the pasta and the egg/cheese mix so we never have lumps or scrambled egg: Combine the fat of the guanciale and a bit of the pasta water in a bowl and mix with the just cooked pasta so that it's coated and hot. Place the bowl over the pot where you boiled the pasta in and use the residual heat to mix the egg/cheese into it (kind of a bain marie method). Extremely creamy and never fails.

    I like to do a mix of both. I use maybe 2 or 3 whole eggs and 1 or 2 egg yolks, depending on how much I am making. Then I usually make an egg white omelette to use up the egg whites.

    This was absolutely phenomena. I used whole egg and it probably was a little less creamy than If I used only yolk, but it was still the best carbonara I've ever eaten.

      In Germany we put Kraut in the pan, replace the starch water with beer and - as always - use mustard to garnish the dish. Maybe I’ll ad some Curry powder next time as well. Should go Nicely with the color of the mustard.

      You can do lots with egg whites! Even if it’s just feeding it to the dog. (BTW, egg whites are very good for dogs!)
      You can mix them in your scrambled eggs the next morning, you can make meringue to top a dessert, you can drop them in soup to make strings, like in “egg drop soup,” you can fry them and put them in a sandwich. Lots of stuff!

    What you need is really fresh peas, from the farmers market or your own garden. After you wash them put them in the refrigerator for the next time you cook. While you make carbonara you don't need peas!

      @@liahfox5840 When i make a small portion, i take the amount i listed above. When i make a big portion (4 people) i double the amount of eggs/yoke etc split over 2 trays/bins (not everything in 1 tray/bin). I empty the first tray and stir the food, then 2 minutes later i throw in the second egg mix and stir more. To balance out the egg mix over the entire portion that i make.

    I had to go on ‘The Hill’ in St. Louis to buy my guanciale and pecorino. I’m going to try whole eggs first. Then maybe experiment with just the yokes. Looking so forward to making authentic carbonara!!!! Thanks chef.

    I prefer using the whole egg as you will need less eggs when using the whole egg. It is also easier to beat the eggs when using the whole egg which makes a better paste.

    As I most times do not have the possibility to reuse the egg white, I use the complete egg - otherwise it would just be a horrible and unethical waste of a product. If you do reuse the egg white, it is in the end just a matter of personal taste ...

    Had a Italian deli around the corner so I always made it with guanciale & pecorino Romano. Then they where closed for vacation and so I had to do it with pancetta and good parmigiana instead...AND PLEASE FORGIVE ME ITALY- it is now my favourite pasta dish!
