  • Spaghetti alla carbonara is a traditional Italian recipe and every time you make this dish, it gets better and better. Crispy, tender in the middle, guanciale is mixed with spaghetti and a homemade peppery, pecorino-filled carbonara sauce. My original recipe has become very popular across the globe as we try to set the record straight: NO CREAM! This spaghetti alla carbonara is my 2021 version.

      Btw this year I am making my own guanicale this stuff they sold is not good too dry if you ask me and we need melted lard good amount of it to make good carbonara. P. S. I will try this system too!

      Hi, in Mexico we do spaghetti verde, (green spaghetti), but is a spaghetti with a coriander cream, (coriander, cream,, milk, onion, cheese, creamy cheese), how can I do like an Italian? Can i try like a pesto? Can you do it?

      Vincenzo! Please help! This is probably one of the easiest dishes yet every time I do it, it f**ks up! Lol! At the end the sauce always goes to the bottom of the plate and doesn't coat the pasta, am I not using enough cheese? Kind regards

      @@enydnightshade it's important to mix the eggs with the pasta water *off of the heat* that way the eggs don't scramble and it becomes creamy :D make sure you finally great a lot of cheese also, it should look like snow :) I hope it works out for you 😀

      @@vincenzosplate Yes! I live in the US, though, so all they had was pancetta, which I was told is similar. I didn't think it would be creamy without using cream! I was pleasantly surprised.

      Yes I've tried it two times now and it's suuper creamy and delicious :)
      But the traditional version from 2019 where you've been at a hotel in rome is still my favorite 😋

    This is why Italian cuisine is so loved and respected. A few simple, quality ingredients cooked well. Proper carbonara can be a little tricky but it’s delicious.

      Hi. Is 200gm of pecorino not too salty for a 300g pasta? I will be trying to make real carbonara for the first time and i'm quite scared to ruin it. Guanciale and pecorino is quite pricey esp. we're outside europe. 🤞🤞🤞 Thanks!

    First time making carbonara and it turned out beautifully. Since the idea behind the recipe is to use easily available ingredients, I substituted bacon for guanchale, used a mix of parmesan and pecorino to keep the cost down, and used whole eggs because there's no way I'm throwing away the whites. I also added two cloves of garlic to thr bacon.
    It seems the the idea behind the recipe is to use eggs to make a creamy sauce in lieu of using milk or cream.
    For a more keto friendly version we can try using something other than pasta, like cauliflower or other veggies.

      @Jems68 , I live in a remote area of the PNW in the U.S. We have a small, local pig farm.The family lovingly raises about six pigs a year and then sends them to a local butcher for resting and then slaughter. I ordered 1/4 pig this year. Worth every penny! However, I think I am going to ask the butcher "what happened to my pig's cheeks?" Haha! Since they do such a marvelous job in curing the bacon, I am going to ask them if they'd be interested in attempting to make Guanciale. I can't find it here in my town.

    In my opinion, the hardest thing about making Carbonara is resisting to snack half of these delicious guanciale stripes while you prepare the rest :P

    People wouldnt believe, but Guanciale tastes so much better than Pancetta in Carbonara. I am lucky to live in a place where its available. If you cant buy it, you can order via amazon, so no excuses :D

      absolutely! Carbonara must be made with Guanciale, so it is obvious that carbonara is better with Guanciale
