Orecchiette pesto, with fresh basil, toasted pine nuts, garlic, pecorino. 7. Farfalle alla caprese salad, with campari tomatoes, fresh basil, fresh boccaccini, and one raw peeled garlic clove, the only thing cooked is the pasta. Ok, now I'm hungry. How can anyone pick just five?
My top besides yours is ricotta ravioli with the good sauce . It has to be home made ravioli! Then next I like ricotta gnocchi with the good sauce Vini. I make meat balls like no one else. I will take this recipe to the grave. I've never seen anyone making meat balls the way I do. I searched thousands of recipes. Keep it simple!!! Right Vini

There's a terrific book out, "Celebrating Italy," that is all about the traditions and recipes. The recipes have marvelous names, like a cookie named St. Agatha's tits to honor the Saint who cut her breasts off to make herself less desirable to men.

I must say I am a pasta lover and could eat it for breakfast lunch or dinner. Of course my Dr.. would have a cow since I can't have a lot of starchy food. I will just have to make smaller portions.. I am hooked on how you cook and I can't get enough of your videos.. I have to say for 60 yrs I was never able to eat red sauce because of all the other ingredients that was put in the cans of tomato and sauce.. Aglio e Olio will always be my top 1, because you just can't beat the flavor that's packed into such a cheap dish. Also, once I mastered it (it's got a lot more nuance than I expected) it remained a staple in our house

I could honestly eat Aglio e Olio every day!! I love playing with this dish but yes, I totally agree it's sooo simple but hard to master, remember always use a really good Spaghetti and fresh Garlic and Parsley! I love Garofalo, Voiello and La Molisana pasta, they are all excellent brands and honestly you can't go wrong!!! I bloody hate Brexit 🤬🤬🤬, importing the most amazing Pasta from Italy used to be so easy but now it's so much more expensive and that's no fault of the Italians! Thank you Aldi, you are very hit and miss but you do get awesome pasta every now and again, for a very reasonable price!! Just watch people eat this for the first time, it's so rewarding!!!!! I discovered that dish during lockdown and it's absolutely a staple now. I make mine with bacon and broccoli. Even better with broccoli, green beans, bell peppers, carrot and onion.

I really love the Pasta al Limone recipe. At home we usually cook some dish very close to it. It is basically the same but the mint is replaced by fried zucchini. That is very delicious, too.

I used to be a chef 20 or more years ago. I enjoy food. Since I've ended up being a nurse. 12 hr shifts. 1 to 2 hrs travelling depending on where I'm sent. Time and life have got in the way. Now I'm in the middle of both a curse and a blessing. Used to doing 60to 80 hrs a week plus mental amounts of travelling. Last year leave my house 6pm get home 945 am. No time to cook or breathe. But this year has been crazy . Work drying up. Most of the places I've worked are fully staffed.im lucky to do 2 shifts a week. Terrible for paying the bills. But other good side I'm back in love with food. The food I know is French, I love it. But. ...... what I love more yhan znything is Italian food. I know much much less about it. But love it. Love your videos. If I win the lotto I'd love to travel top to bottom of Italy. With time to enjoy the food and culture. Like the rich folks from UK did many years ago.... the grand tour 😂

I have to say, although a lot of pastas are available in the Netherlands, the actual recipes are not that common, at all! Simplicity with sauce in a jar, and usually on top (yes, really), it surely opened my eyes to see how much is possible, and how much the dish is improved by simply changing the recipe to properly include the sauce. A couple of years ago an Italian national showed me how to make Spaghetti al Limone, which I hadn't heard of. His version used panna da cucina, which I guess is basically cream. That seemed fine at the time, but I am very glad to see your version here without cream. I'll be trying it as soon as lemons are in season.

Vicenzo caro mio...love your channel. I guessed 4 of the 5 before watching: I didn't get the gnocchi because I didn't think of that as a pasta. My substitute would be spaghetti alla pesto. THANK YOU for the tiny meatballs; your Nonna was right and all the detractors are just lazy. We love to make these with white veal in a white wine tarragon sauce. But about your pasta alle vongole, I had to laugh. Yours is so elegant. We have eaten mountains of this on the beaches of Liguria, the villages of Cinque Terre, the micro clams pulled from the sea, boiled with oil and wine and herbs in a pan on an open fire, and then just tossed with great platters of garlicky, lemony spaghetti or linguine and fresh parsley. Sort of pasta al limone mixed with clams. It could take an hour (and a couple of bottles of wine) to eat, taking each tiny vongole out of its shell and savoring it with a forkful of pasta. The most romantic dish on the planet, on a hot Italian seashore. No arranging required. By the way, the best Valentine's Day or lovers' midnight pasta is the pasta al limone topped with caviar.

Bravo, thank you for the inspiration, especially the recipes! I wrote down all the ingredients for the preparation and we'll go shopping on Thursday. It's just brilliant to conjure up such delicious food from so few ingredients, especially the lime pasta made me very curious. And the best thing is the ingredients don't cost that much but I have to admit that I can't make the recipe with the mussels because seafood costs an outrageous amount here. I would also like to give an update because my child has asked for double portions the last two times even though he is not a big eater 😚👌

Excellent choices, though my mixed meat ragu for me is my favourite. It takes leftover cuts from trimming briskets, pork butts and pork ribs and make a ragu using soffritto, tomatoes, red wine, parsley and basil served with strozzapreti. Gnocchi is my #2 mainly for sentimental reasons, it was the thing Nonna perfected and has been handed down to now our kids know how to make it now. We can use sage and butter, pesto or even bolognese sauce works well. #3 is another one of Nonna's, she took olio e aglio and added anchovies. Something I loved as a kid growing up and one I still love in my 40's. I know Vincenzo you are not the biggest fan of anchovy, I personally love it. #4 is Arrabbiata Calabrese. I always enjoyed Arrabbiata but it was not a top top favourite of mine until I discovered nduja. Now I can't get enough of the stuff. #5 is Carbonara, a classic for a reason. I was an adult when I tasted this proper for the first time, as this was something Nonna didn't ever make, she was from rural Veneto so not really that proficient in Roman dishes, I never liked the cream crap that you get in restaurants but when I tried it for the first time proper I was blown away.

I'll try the lemon pasta. I made up a recipe with mini farfalle, diced chicken, 'ceci' peas, toasted pine nuts, capers, artichoke hearts, some garlic, black pepper, dried oregano, olive oil, parmesan cheese, and a lotta lemon. I'll try the fresh mint sometime. My lemony pasta dish is more on the oily side, too. I often sprinkle the cheese on top after it's ready rather than stirring it in.
Pasta al limone really surprised me, I never had it. I was in Amalfi in the 90s (almost got adopted by a restaurant owner back then), but in all my years the combination lemon, mint and pasta never occurred to me. Thanks for the inspiration, I'll give it a try (in the spring/summer, when I got fresh herbs again). And homemade gnocci... man, it's a long, long, long time since I made them and they were fabulous (followed Gennaro Contaldos ricotta dumplings recipe). That's a big trip down memory lane... gotta make that soon, maybe together with my girlfriend and her girls, a little family project :) My personal favourites... 1: Spaghetti Amatriciana 2: Spaghetti/Linguine Vongole (unfortunately, I don't get fresh and good Vongole very often - and my girlfriend doesn't like anything living in water) 3: Lasagne 4: Spaghetti / Linguine Bolognese 5: Pasta verde with a ham / peas / creamsauce and a healthy dash of nutmeg. I know, it's not italian (at least not to my knowledge, please correct me if I'm wrong), but it's a dish my mother made and it's one of my comfort foods.
Hi Vincenzo, 3 weeks ago they opened an "Italian" restaurant in our small town. So we went there to see with friends. I didn't order any food there... Why? I applied the so-called "Vincenzo" test there (I invented the name of the test :-))) The Vincenzo test means: You open the menu to the pasta page, look for "Carbonara" and read the ingredients.... I did it, I started laughing so loudly and so sincerely that the whole restaurant looked at our table incomprehensibly... What would you do in my place? My top besides yours is ricotta ravioli with the good sauce . It has to be home made ravioli! Then next I like ricotta gnocchi with the good sauce Vini. I make meat balls like no one else. I will take this recipe to the grave. I've never seen anyone making meat balls the way I do. I searched thousands of recipes. Keep it simple!!! Right Vini

There's a terrific book out, "Celebrating Italy," that is all about the traditions and recipes. The recipes have marvelous names, like a cookie named St. Agatha's tits to honor the Saint who cut her breasts off to make herself less desirable to men.

I must say I am a pasta lover and could eat it for breakfast lunch or dinner. Of course my Dr.. would have a cow since I can't have a lot of starchy food. I will just have to make smaller portions.. Aglio e Olio will always be my top 1, because you just can't beat the flavor that's packed into such a cheap dish. Also, once I mastered it (it's got a lot more nuance than I expected) it remained a staple in our house

I was surprised how easy carbonara was until I made it, cement like cheese and egg into a cream in half a minute or less.
I could honestly eat Aglio e Olio every day!! I love playing with this dish but yes, I totally agree it's sooo simple but hard to master, remember always use a really good Spaghetti and fresh Garlic and Parsley! I love Garofalo, Voiello and La Molisana pasta, they are all excellent brands and honestly you can't go wrong!!!
I bloody hate Brexit 🤬🤬🤬, importing the most amazing Pasta from Italy used to be so easy but now it's so much more expensive and that's no fault of the Italians! Thank you Aldi, you are very hit and miss but you do get awesome pasta every now and again, for a very reasonable price!!

I really love the Pasta al Limone recipe. At home we usually cook some dish very close to it. It is basically the same but the mint is replaced by fried zucchini. That is very delicious, too.

I used to be a chef 20 or more years ago. I enjoy food. Since I've ended up being a nurse. 12 hr shifts. 1 to 2 hrs travelling depending on where I'm sent. Time and life have got in the way. Now I'm in the middle of both a curse and a blessing. Used to doing 60to 80 hrs a week plus mental amounts of travelling. Last year leave my house 6pm get home 945 am. No time to cook or breathe. But this year has been crazy . Work drying up. Most of the places I've worked are fully staffed.im lucky to do 2 shifts a week. Terrible for paying the bills. But other good side I'm back in love with food. The food I know is French, I love it. But. ...... what I love more yhan znything is Italian food. I know much much less about it. But love it. Love your videos. If I win the lotto I'd love to travel top to bottom of Italy. With time to enjoy the food and culture. Like the rich folks from UK did many years ago.... the grand tour 😂

I have to say, although a lot of pastas are available in the Netherlands, the actual recipes are not that common, at all! Simplicity with sauce in a jar, and usually on top (yes, really), it surely opened my eyes to see how much is possible, and how much the dish is improved by simply changing the recipe to properly include the sauce. A couple of years ago an Italian national showed me how to make Spaghetti al Limone, which I hadn't heard of. His version used panna da cucina, which I guess is basically cream. That seemed fine at the time, but I am very glad to see your version here without cream. I'll be trying it as soon as lemons are in season.

Vicenzo caro mio...love your channel. I guessed 4 of the 5 before watching: I didn't get the gnocchi because I didn't think of that as a pasta. My substitute would be spaghetti alla pesto. THANK YOU for the tiny meatballs; your Nonna was right and all the detractors are just lazy. We love to make these with white veal in a white wine tarragon sauce. But about your pasta alle vongole, I had to laugh. Yours is so elegant. We have eaten mountains of this on the beaches of Liguria, the villages of Cinque Terre, the micro clams pulled from the sea, boiled with oil and wine and herbs in a pan on an open fire, and then just tossed with great platters of garlicky, lemony spaghetti or linguine and fresh parsley. Sort of pasta al limone mixed with clams. It could take an hour (and a couple of bottles of wine) to eat, taking each tiny vongole out of its shell and savoring it with a forkful of pasta. The most romantic dish on the planet, on a hot Italian seashore. No arranging required. By the way, the best Valentine's Day or lovers' midnight pasta is the pasta al limone topped with caviar.

Bravo, thank you for the inspiration, especially the recipes! I wrote down all the ingredients for the preparation and we'll go shopping on Thursday. It's just brilliant to conjure up such delicious food from so few ingredients, especially the lime pasta made me very curious. And the best thing is the ingredients don't cost that much but I have to admit that I can't make the recipe with the mussels because seafood costs an outrageous amount here. I would also like to give an update because my child has asked for double portions the last two times even though he is not a big eater 😚👌

Great way to whip up dinner quickly.
Excellent choices, though my mixed meat ragu for me is my favourite. It takes leftover cuts from trimming briskets, pork butts and pork ribs and make a ragu using soffritto, tomatoes, red wine, parsley and basil served with strozzapreti.
Gnocchi is my #2 mainly for sentimental reasons, it was the thing Nonna perfected and has been handed down to now our kids know how to make it now. We can use sage and butter, pesto or even bolognese sauce works well.
#3 is another one of Nonna's, she took olio e aglio and added anchovies. Something I loved as a kid growing up and one I still love in my 40's. I know Vincenzo you are not the biggest fan of anchovy, I personally love it.
#4 is Arrabbiata Calabrese. I always enjoyed Arrabbiata but it was not a top top favourite of mine until I discovered nduja. Now I can't get enough of the stuff.
#5 is Carbonara, a classic for a reason. I was an adult when I tasted this proper for the first time, as this was something Nonna didn't ever make, she was from rural Veneto so not really that proficient in Roman dishes, I never liked the cream crap that you get in restaurants but when I tried it for the first time proper I was blown away.

I'll try the lemon pasta. I made up a recipe with mini farfalle, diced chicken, 'ceci' peas, toasted pine nuts, capers, artichoke hearts, some garlic, black pepper, dried oregano, olive oil, parmesan cheese, and a lotta lemon. I'll try the fresh mint sometime. My lemony pasta dish is more on the oily side, too. I often sprinkle the cheese on top after it's ready rather than stirring it in.

Pasta al limone really surprised me, I never had it. I was in Amalfi in the 90s (almost got adopted by a restaurant owner back then), but in all my years the combination lemon, mint and pasta never occurred to me. Thanks for the inspiration, I'll give it a try (in the spring/summer, when I got fresh herbs again).
And homemade gnocci... man, it's a long, long, long time since I made them and they were fabulous (followed Gennaro Contaldos ricotta dumplings recipe). That's a big trip down memory lane... gotta make that soon, maybe together with my girlfriend and her girls, a little family project :)
My personal favourites...
1: Spaghetti Amatriciana
2: Spaghetti/Linguine Vongole (unfortunately, I don't get fresh and good Vongole very often - and my girlfriend doesn't like anything living in water)
3: Lasagne
4: Spaghetti / Linguine Bolognese
5: Pasta verde with a ham / peas / creamsauce and a healthy dash of nutmeg. I know, it's not italian (at least not to my knowledge, please correct me if I'm wrong), but it's a dish my mother made and it's one of my comfort foods.

Hi Vincenzo, 3 weeks ago they opened an "Italian" restaurant in our small town. So we went there to see with friends. I didn't order any food there... Why? I applied the so-called "Vincenzo" test there (I invented the name of the test :-)))
The Vincenzo test means: You open the menu to the pasta page, look for "Carbonara" and read the ingredients....
I did it, I started laughing so loudly and so sincerely that the whole restaurant looked at our table incomprehensibly...
What would you do in my place? If you saw this in the menu:
- Spaghetti ala Carbonara, ingredients: Pasta, onion, bacon, milk cream.......🤣🤣🤣In an Italian restaurant ??? The world must have gone mad...

Of the five, ravioli is the only one I haven't made myself and won by a hair over Marinara with shrimp and scallops.
I fell in love with Vongole the moment I took my first bite and it's been my clear favorite for a couple decades now. Probably will stay as my #1 for the rest of my life.
