We called this kind of dish “Sanbeiji”( three cup chicken) in Taiwan. Threes cup means three important ingredients- “soy sauce, rice wine & sesame oil “. Personally I really like eating the basil leaves part & sliced ginger haaaaa I am pretty weird

If you cook over medium heat, it's okay to use sesame oil. The pan doesn't get too hot.

Is that toasted sesame oil or just sesame oil? It looks like toasted sesame oil, which is rarely used at the beginning.
