I only use sesame oil to marinate but not using to cook since it burns and got smoke

If you cook over medium heat, it's okay to use sesame oil. The pan doesn't get too hot.

We called this kind of dish “Sanbeiji”( three cup chicken) in Taiwan.
Threes cup means three important ingredients- “soy sauce, rice wine & sesame oil “.
Personally I really like eating the basil leaves part & sliced ginger haaaaa I am pretty weird

Request... can you figure out how to replicate Pick Up Stix's 'House Special Chicken'?
I love its' flavor (everyone does obviously). But, I've never tried replicating it yet. I bet it is simple... perhaps white wine, ss, oyster sauce, mirin or sugar, garlic, maybe chx broth.
