I love your recipes. I have adapted them into my everyday cooking, and have so for the past year. My blood pressure is under control and as a diabetic, my A1c is very stable. My physician has remarked "l dont quite know what you are doing...keep doing it. He also commented that this is the healthiest he has known me to be in the 20 years we've known one another. My energy level is better than it has ever been. Thank you for helping me make changes in my diet/lifestyle...it has given me a new lease on life and i am grateful in many ways. For me to be 67 years young...life is good❤
I just made this for dinner... Slight variation since I didn't want to go shopping. Sweet peppers instead of chili pepper and I added green onions, served over jasmine rice. It was DELICIOUS!

I made this during the week. It's was amazing. Due to medication my sense of smell and taste are impaired. I could smell this as I cooked it. I could smell it whilst I waited for eating time and it tasted amazing! I had no parsely so used Lemon Balm from the garden. I am making it again on Sunday when my daughter comes over. I hope to enjoy it like I did this first time. 🥰
Cooked it last night, and it came out perfect❣️ Added extra garlic & some spring onions (aka scallions) I don't care for tomatoes, so I swapped out for red bell peppers. And didn't have fresh parsley, so swapped out for a little dried parsley & fresh baby spinach Ate over small bed of rice

Hey Joel Thanks for the base recipe which I followed fairly closely, just the 2 of us now, so I only used 1 large breast and added 2 chorizo sliced and fried after the chicken; a diced shallot went in with the garlic and chilli with a few pinches of piment d’espelette for that subtle background taste, and 1cup of chicken stock simmered then thickened with a teaspoon of Arrowroot. Served with toasted olive bread slices, the result was delicious! Thanks for making this home cook better than I was yesterday 👍😉

Including both olives and anchovies means that it could be very salty, so anchovies will be left out. Perhaps replacing anchovies with shrimps could work. I'm not a fan of chilly peppers, so regular red peppers will do. I will try this soon. Looks like a simple 30 minute recipe.

But I will never put that into my chicken. Haaahahaaaa. I eat that fish with fried precoocked cassave. And the fish we fry it very dry. When its cooled down we make a very hot saus with garlic/ onion/ tomatoes/ sugar and then we put the fried little fishes in the saus. That fish we call it : ""Trie and Cassave."" You should read it like (Tree.) Maybe you eat it already in Bali . CUZ It is a Javanese meal. Please forgive me if I am boring. But You make us feel soo wonderfully comfortabel!!! Thanks for reading.
