7.9 oz/224 g zucchini
1/8 tsp salt
1/16 tap sugar
1 tsp rice wine
16 oz/450 g chicken
3 tsp soy sauce
1/2 tsp sugar
1/4 tsp white pepper powder
6 tsp corn starch
1 1/4 tsp baking soda
2 tsp rice wine
1 tbsp water
1 tbsp oil
4 cloves of garlic, minced
5 slices of ginger, minced
4 stalks of green onion stem
10 pcs dried whole chili
1 tsp chili flakes
1 tbsp rice wine
1 tbsp soy sauce
2 tsp dark soy sauce
1 1/2 tsp sugar
1/2 tsp paprika
1 tbsp rice vinegar
3/4 cup water
1/4 tsp white pepper powder
1/2 cup roasted peanut

I just made it. I change out red chili flakes for jalapeno. We like that flavor better. We added double zucchini. Next time we will add a bell pepper, red or yellow. It's very delicious. I like the way the water made a little gravy and my wife walked in the house after I cooked it and just went crazy over the smell. She loved it.

Yeah, It's called fluff sugar/salt(毛毛盐) in Szechuan cuisine. Just give very tiny flavour to ingredients in the first stage of cooking, usually 0.3-0.8 grams. It's useful for shaping complex tastes.
