Regarding creating series for Months or Days of the weeks, full or abbreviated, this works because Excel "knows" about these predictable series, and you can create your own ones, like letters of the radio alphabet (Alpha, Bravo, Charlie, ... , X-Ray, Zulu) or the US States. This is hidden deep inside Excel's Options > Advanced Options > Scroll way down to General > Edit personalized lists. There are the already recorded lists (months and days of the weeks, normaly) and you can add yours there. You can pick from a list composed in a sheet, or just type what you need. They are saved and available for all documents created on your computer, though it would be nice if it would be saved in our Office 365 account.

I wanted to mention that you can also use flash fill to arrange names in a different order as well as add commas etc. For instance, | joe smith | can be turned into: | smith, joe | by typing it that way. Right now I'm preparing spreadsheets for 2020 tax purposes and I'm trying hard to match what I have to what you show and how I might use them.
