My canning shelves are nowhere near as full as yours, but it’s so satisfying to look at the fruits (literally!🙂) of your labor. The jars look so beautiful all lined up! I tend to freeze my chicken broth, but can the beef bone broth. That’s my “pure gold” item…like your lard. Congratulations on your bountiful harvest and successful preservations.
For the beets, look up a Russian vinaigrette recipe! It’s not a salad dressing but more like their version of potato salad. It’s a delicious & beautiful mix of beets, potatoes, sometimes carrots, & dill pickle, plus fresh onion, with a simple dressing. I can’t stop eating it. You may find you will continue to pickle beets just to make this recipe! (it may typically be made w/fresh beets, cooked, but you can adapt with pickled beets & just adjust seasonings/dressing).

Nice job, you guys are amazing! Such a satisfying feeling to have all that food safely stored and ready to go. I just put my canner away for the year, exhausting season, but so greatful I know how to preserve food. I even learned how to pressure can! Thank you for your inspiration.

With your beets you can try to make beet soup(called "borscht" in english I believe) The basic ingredients are: broth, vegetables and of course beetroots. My mum will also add various things like white beans/boiled eggs potatoes or cabbage. For Christmas, she makes special mushroom dumplings....a special treat for our family!
Google "barszcz czerwony" for the Polish recipes.
Also a Swedish girl I used to date would also mix shredded beets with beef patties. Unfortunately I cant remember exactly what they are called.

My parents came home from their Chilean mission making a salad with tomatoes, cucumbers, celery, olives, hearts of palm, and beets, and avacado. All tossed with either olive oil and lemon or just Italian dressing. They didn't use pickled beets, but I am sure it would still be amazing.
Oh also, I made baby food out of beets and avacado and whatever sweet thing they like. I felt like super mom! Lol.
You amaze me! You get so much done with the homestead, children, garden, canning and pregnant too! I have had those days of looking at what got canned and what got eaten and had to make some change for the next year. Hope you and your family have a very Merry Christmas and a wonderful New Year. I had the same problem with my garlic. It was so disappointing to throw out so much!! I actually gave some to friends because it needed to be picked through. I did manage to pull out all my larger cloves and plant them. They all came up! You all always do so well stocking up.

I really appreciate your tour! So much food! But from my own experience I know, you need that amount.
This year we had almost no fruits to harvest and nobody else had. So we weren't able to cook that amount of Jam we really need. Now I am glad, to have some jars from former years left.

Im thinking of blanching/freezing a lot more things this summer and then waiting until cooler weather to can them.... especially the longer processing meat containing jars. Small kitchen and oh so hot Texas summers......
We LOVE to make borsch with pickled beets! You could also use up some of those frozen tomatoes if you’re making a Ukrainian style. Start with a beef bone broth and you’ve got yourself a delicious and hearty winter soup!

We sautée our slices beets with sliced sweet potatoes in some butter and then at the very end sprinkle some brown sugar on them and stir. All four of my kids will eat them! Sometimes I add in sliced apples near the end too.

Pickled beets with sweetened whipped feta is delicious, add honey, drop of Olive oil and some s&p to feta and blitz in a food processor.
Pickled beets chopped up and added to salad add a nice flavor without eating it straight!
Re: pickled beets, they are great served in a falafel or chicken Sharma wrap. Falafel is a great way to use up a ton of herbs too.
Now I want a shawarma, but our shawarma place closed a few months ago when the owner retired 😭. I guess I could make some, but it's always so time consuming....
Try a savory beet, slicing or grating then salted. Make chips and salad toppers by dehydrating or freeze drying. Powder your dried beets and use in smoothies etc

Try this recipe for beets: slice them very thinly and bake them in the oven with olive oil, feta cheese, rosemary and honey - delicious😋
I hard boil eggs then peel and put in bowl and dump a jar of pickled beets over them, the eggs turn nice and pink and a good source of protein in my husband's lunch!plus he likes the beets too with the eggs
You inspire me
I would put pickled beets on salads along with a lot of other things, so that they’re just one part of a greater salad,
Kind of disguised in it with a really good dressing. Makes me think of the beets at Jason’s deli on the salad bar!
I use beetroot in a salad with roasted pumpkin, baby spinach, toasted pine nuts, crumbled feta and a drizzle of balsamic vinegar.
Try hard boiling some eggs and letting them soak in the pickled beets and then turning the eggs into deviled eggs. They turn pink and get a firmer texture. We love them.
We're camp "dill" relish. We're in AR now, but we lived in TX and CA for decades prior to AR and dill relish was abundant in both states. Now I can my own dill pickles/relish, so have not noticed at all if it is scarce here in AR stores. 😆

An Idea with Beets is Candied Beets. We do not care for Pickled Beets but love candied Beets. Its just the opposite really of pickled beets. Our recipe is 2 cups Sugar/1 cup vinegar. We also add 3 cloves to each jar we can. :) Love your pantry and storage.

Beets go nicely with grilled chicken breast salads (I like lemony Greek seasoning or fresh crushed garlic on meat) and add red onions, feta cheese, bell peppers, tomatoes, greek olives, banana peppers, romaine and butter lettuce. Add farro or yellow rice for side.
This does sound good! We’ll try to incorporate them like this in our next salad!!
I hope a glass of wine was enjoyed in this production. 🤣 Sweet, either way. I'm definitely dialing in the highest and best use for everything: canned, dried, freeze-dried, frozen, or held in cold storage or in the ground. There's a sweet spot for everything.

My mum is Swedish and makes a beetroot salad for Christmas from pickled beets!
Diced then into tiny cubes
Mix with graded green apple
Dollop of horseradish
Mayo to make it creamy
Salt pepper to taste
It will turn pink and look really weird 😅

For the soggy kimchi , you can drain some of the juice and make kimchi fried rice. We will eat it for breakfast with an egg on top.

Canning recipes for pickled beets aren't that good.
Try this instead for your pickling liquid...
1Cup H20
1 Cup sugar
1cup cider vinegar
Yum on the dill relish. I make it too. It makes good potato salad.
I'm going to try the cowpea soup, if I get the chance to plant the peas.
I use beets, zucchini, or garbanzo beans in my fruit smoothies. Just a small amount. With all the fruit it hides the veggie taste but still get the goodness of vegetables.
I use pickled beets in salads for the winter in place of tomatoes since the tomatoes are terrible in the winter.
Rinse the beets first, then Add sugar to the pickled beets. Slice and add to salads
For beets I prefer to make gnocchi with them (beet&potato gnocchi) and preserve them in the freezer, I make a gluten free recipe that turns fenomenal ❤

I used a recipe I found here in YT (Homemade Beet Gnocchi, from Goodful) I just replaced common flour by the gluten free.mix I make myself (400gr corn starch, 300gr tapioca starch and 300gr rice flour). You can use your own gluten free flour, maybe you need to put a little more gluten free flour but just add as needed and control not to have a hard dough, you need to feel it soft...if it's a bit sticky just throw some GF flour under and above, you can manipulate and make gnochis with your hand and cut them with a knife ...just let them rounded.
You could use the beets in a Nomato sauce. Makes a good marinade or dipping sauce
We have a freeze dryer and dehydrator. My husband prefers summer squash and zucchini dehydrated because it come back in soups with a texture and doesn’t get mushy.

We love pickled beets but mine are darker than yours... not sure why. Anyway, I like to chop mine and top salads with it. It's a nice pop of acid alongside cheese and nuts on a basic green salad. My husband likes his with cheese and deli meat on crackers. And a timely suggestion is making a spread - almost like a beet relish- and putting it on bread for leftover turkey sandwiches!
It looks like you used pickle spice. You could use cloves, allspice, and cinnamon. We prefer that variant. Also, we've added cherry juice instead of water in the brine and it's so special. It certainly doesn't lower acidity and the flavor is really nice.

My husband hates sweet pickles, but I remembered my parents buying dill relish growing up and got that for him. It's not hard to find, even in idaho
Beets are great freeze dried. They really are a great snack. I like beets and my babies really liked fresh beets. Borst is a wonderful soup. I would make borst and add sour cream with it. But for your family, I'd suggest freeze drying them as snacks. They are like chips.

You should put the kimchi in a blender to purée it, freeze dry it, and then powder it. Then you can turn it into a kimchi sauce instead. Put it on pasta or use as dipping sauce.

I would drain the juice off the beets, add sugar and cornstarch. After it thickens, add the beets and warm up. I think it would be more like Harvard Beets.

Beets are great raw in smoothies - and in chocolate cake if you don't like the taste of them. Also, some studies are showing how beets improve athletic performance, so if any of your kids are athletes getting them to eat them in smoothies would be great for them.
Thank you for posting the tour! These are life goals for me but we try to do what we can in our limited space.
It just goes to show how much food we need to grow and preserve for self sufficiency.
If there is one thing you could grow or preserve yourself but cannot what would it be? Would there be anything else that you would want to extend in the future?

Great question on the preserving. Tropical fruits would be high on the list of things we wish we could grow here.

Do you use moisture absorbers in your jars for your freeze dried food or just vacuum seal or both? Your pantry is absolutely amazing. I have a freeze dryer and am just getting started so if you have advice on that, I would really appreciate it. I do not plan to store in my large bags.

Dehydrate/Freeze Dry your BEETS then POWDER them, make your smoothies and add a spoonful or put in a Tablet Form (pill)--MEDICINE
Could always cut the beets and put them on a salad to hide them.
