Most of us can't afford freeze dryer or have cold room to store fresh vegetables. You guys are so fortunate!

Right! Even if i could afford to buy one, i would need a new electrical circuit and electric furnace AND solar panels. Freeze dryers are probably an additional $200 a month in electricity too. Its a such a LUXURY to have one and afford it.
I love how when I'm watching one video after another I can see you just keep adding and adding to that one freezer and it looks like it has infinite space 😂

It's wonderful to see all your hard work in the garden being preserved in various ways. So many more harvests and preserving to come! Cam with the onion goggles, chicken boy and shot of you holding tiny Riggs so cute. Truly a family affair!
I have started doing this for garlic, and figured I would pass it on to you! So, firstly, take any glass jar with a lid, and throw a bunch of garlic cloves in (you want the cloves separated), leaving about half the jar empty. Then shake it really hard! The skins will come off quickly and easily. Then just cut the root end off. Throw all of those garlic cloves in a food processor, process it, then freeze that in ice cube trays. Literally takes just a few hours to freeze up, and they pop right out to store in a larger container. Super handy for quick and easy garlic, and it’s cut my garlic chopping time down significantly. I do this once a month now, and it is such a time saver.
What a great idea. I think I’m going to give that a try. I’m going to freeze them in the smallest Souper Cube trays (same brand as the large Souper Cube Becky used to make ice for blanching veggies in this video.).

Freeze drying and also making scape butter and freezing are my favorite ways to use scapes.

My grandmother grew up in the countryside of the state of Virginia, here in America. She and my great-grandmother used to make pig feet in the oven. It's awesome to see how others on the other side of the globe in a different culture make them. Thanks
I make refried beans right in the jar as I open it. Same with chickpeas and hummus. My 3 kids practically live off of bean and cheese burritos, and hummus with flatbread
Leafy greens should maintain its nutrition if dried. I like to dry mine, whole leaf, seal them in old chip bags and throw them into soups or noodles when I want some. Love seeing how you preserve your garden!
Especially in a soup... if any of the nutrients are cooked out, they just end up in the broth, no?

The amount of dedication you have to feed your family healthy homegrown, home cooked food is just absolutely amazing! I do a lot of prepping, cooking and dishwashing and I’m on my feet for hours on end. I find that my anti-fatigue mat is such a huge blessing to my feet and back. I have a short one at the bottom of the stove and a long one at the sink and counter where I do my prep. I chose one that’s easy to clean.
Hey I love you shows I enjoy what you're doing and it's the right thing as I was an executive chef for 45 years I watch you in your canning and your struggle with time you really need some small hand tools like slicers dicers maybe a mandolin ours will be saved
I was watching this show where you filled a large stock pot with water in the sink and then carried the heavy pot to the cooktop. It would have been a good idea to have installed one of those pot fillers at the cooktop to save you from carrying heavy pots.

I love seeing the kids helping out. You raised some nice children 😊 it reminds me of when my mom would slowly teach me how to cook as she did it. Best memories i have. And it's always good to get the kids out and about in nature and just doing stuff in general other than purely school work and technology. Keep's them active and their brains learning useful life skills. 💖
I remember last year when the celery was dehydrated. I was shocked at how small it got! It actually gave me the idea to purchase some freeze dried celery and also mushrooms - a great and easy-storing addition to soups and stews

That is super interesting about the blueberries not needing to be pricked! I bet the variety does play a role. Some varieties do leave a picking scar where the stem attaches and that may be enough to let the moisture out when freeze drying! I also loved the goggles while chopping the green onions....so great 😆

Garlic scape powder is AWESOME! my third year doing it (I just have a regular dehydrator, but it works) I use the powder a lot- it's a different taste to regular garlic powder. Super yum!
I really love your videos! Not only is it fun keeping up with your sweet family, but you really inspire me to keep moving towards our ultimate goal of being able to produce and preserve a years worth of food each year. I've gardened long enough to know quite a bit, but not long enough to be very good at putting it all in practice, so I really feel frustrated sometimes. It shouldn't be so hard to get things to grow well, especially when I'm doing all the things. But I figure it's just the natural learning curve. Sometimes I'm so successful with a particular crop, I can't keep up with the harvest, but never successful as a whole. Thanks for the inspiration to keep going!
That is very normal! It took me years to get most things to grow well. Even so, we always have a few failures. Gardening is something that no one is perfect at. Sounds like you are doing great! Appreciate you being here!
