Buckwheat Bread with Chia and Oats - Bread Rich in Fibers and Nutrients

Gluten Free and Lactose Free
yeast sponge
10g instant dry yeast
1 tsp white rice flour
1 tbsp sugar of your choice
mix
3 tbsp water at room temperature
Mix, cover and reserve
15 ml olive oil - 1 tbsp
5 g xanthan gum - 1cc
mix and book
1 egg
whisk to foam
Reserve
mix/dough
100 g of white rice flour
100 g buckwheat flour
40 g of sweet sprinkle
30 g rolled oats
20 g of corn starch
20 g of potato starch
10 g of chia seeds ground into flour
4 g of psyllium husk powder - 1cc
⅛ cc of cream of tartar - 1g
½ cc of salt
Mix everything and add:
yeast sponge
beaten egg
1 tsp of apple cider vinegar
Beat everything and add water little by little.
Total water in the recipe: 270 ml
Add the olive oil with the xanthan gum
Beat to incorporate into the dough
Note the point of mass
Transfer to a bowl greased with olive oil
Cover and let the dough rest for 20 to 30 minutes.
Transfer the dough to a surface floured with rice flour and shape it into a ball using a spatula.
Place the bread in a bowl lined with a towel and floured with rice flour.

Cover again and let it brew for another 30 minutes.
Watch the surface of your bread
Preheat the oven with a closed iron pan at maximum temperature for 20 minutes
Carefully transfer the bread to a sheet of greased parchment paper dusted with rice flour and make decorative cuts in the dough, then transfer to the iron pan (be very careful not to burn yourself).
Cover the pan and bake at 230ºC for 20 to 25 minutes.
Remove lid from pan and let brown on top (approximately 10 to 15 minutes)
Watch your bread so you don't overdo it.
If necessary, do the toothpick test.

Remove from the iron pan and let cool on a wire rack.
After cold it can serve.

If you don't have an iron pan, you can shape the bread and place it in a mold or tray.
Preheat the oven with a tray in the bottom and when you put the bread to bake, add boiling water in the tray and spray the walls of the oven to generate steam. After the initial 20 minutes of baking, remove the tray with water from the oven and let your bread finish cooking.
