We love Mexican stuffed bell peppers, not always with rice.... we usually use this as a leftover recipe.... taco meat, onions, salsa, spinach and cilantro... or even with leftover fajita ingredients.... just mix up all your ingredients just like a regular pepper recipe ... I stuff them and top with Mexican cheese and cook ‘me up. We prefer red , yellow and orange peppers. I also prebake/steam my peppers before stuffing as you do.
I bring my elderly parents dinner sometimes. They are ALWAYS requesting that I make this for them!! I use all of the colors of peppers, and have substituted turkey for the hamburger, and mozzarella for the pepper jack at times. My Dad is a retired Chef and he says these peppers are the best he's ever tasted, and are definitely restaurant worthy!!
I’ve just finished making these, thanks! If anyone is reading this I recommend using red peppers for all because they are the sweetest, if you want a kick just add some chilli and finally, less rice and more mince. I also used turkey mince and it is healthier and looked better.
I've just tried the recipe, maybe the best stuffed peppers recipe I have tried, especially if you consider that I come from Greece which takes pride in good stuffed peppers recipes. This stuffed pepper recipe is excellent! It's my favorite! I have made it more times than I can count. Every recipe I have tried here I have liked. I’m pescatarian, so I replaced the beef with fresh shrimps and my god - best meal of my life. I’m Indian, so I’m used to a ton of spice in my food, so I thought a simple Italian spice mix wouldn’t do much, but it blended so beautifully with the nuttiness of the black rice I used. This recipe is amazing, don’t hesitate to try it.
Neat hack that I just learned. If you freeze your fresh spinach it has a chip texture when you go to use it. This saves time not having to chop it every time.

I made this with ground chicken and used brown rice with quinoa added celery to the onions at the beginning …. Topped with a little tomato sauce ..was. Perfect for our household .. thanks for your great recipe

Being single makes cooking complicated seeing that there is no incentive to cook. I have been following you for while and enjoy your videos. So finally I decided to try this recipe. In France we can buy packs of three, green,yellow and red. So I followed the recipe adding some pesto that I had left over. This gave me four peppers to freeze and two portions of stuffing to freeze for later meals. Thank you for getting me back in the kitchen.
I love stuffed bell peppers and cabbage rolls oh, but I do mine the same way in sort of a deconstructed method. I cook the rice separately but everything else goes in a pot I do the hamburger and onions, garlic, tomatoes Etc when that's mostly done I throw in the largely chopped but still Bitesize bell peppers. If I'm doing cabbage I wait till everything else is completely done and then throwing the chop cabbage since it Cooks down very quickly. I only dirty one pot and it's much easier. I've been watching a lot of your videos today and have saved most of them. We try to eat healthy sometimes LOL I actually much prefer vegetables and beans to most Meats anyways, but the rest of the family not so much. I think the like a lot of these though! So thank you

OMGoodness! I made these for dinner tonight and they smell amazing, they are beautiful on the platter also. My son grabbed his and devoured it I’m waiting for hubby to get home to eat mine, but I did sneak a bite and mercy they are good! I used ground pork, as we have a pretty good stock of it, I also used a wild rice blend. I didn’t use any green peppers, as I agree the ripe ones are amazing. Thanks for sharing

As a kid, I hated stuffed peppers, then I grew up and decided one day I had to have some, or else. I love the green ones, a bit of bitterness is so delicious for me. I have made them with tomato sauce around the peppers as they cooked, but I'm going to try it this was as well. Thank you!
Made this tonight and loved it! the flavor is great and because of the rice in the dish, it is filling enough. I also appreciate that there is not a lot of meat in it, less than 100g per serving as I try to limit my meat consumption. First time having and making stuffed peppers. I upped the salt and added maybe 1/4-1/3 c marinara sauce to the filling before stuffing the peppers. (Was trying to use up ingredients in the fridge.) daughter really liked them! So did I. Thank you for sharing! I have about a cup of filling left and a cabbage head. May blanch some cabbage leaves and make stuffed cabbage rolls.
I love stuffed bell peppers. I use Uncle Ben's Wild and white rice, stewed tomatoes, some onion chopped fine, some chopped mushrooms and for meat, par boiled to fallin off the bone squirrel, and par boiled and then fried squirrel pieces to circle the pan of preppers. It gets baked covered. I have lately learned to pre cook, or steam the peppers till almost tender, then stuff and bake. 375* for about 20 mins works for me.
Seeing that I had some leftover beef and rice stuffing in the freezer I tried the following. I chopped some courgette,peppers and aubergine; coated them in olive oil and roasted them in a small dish for 20 minutes. I mixed the stuffing with a small pot of yogurt and spread it over the roasted veg. I sliced a tomato on top and sprinkled it all with grated Parmesan. Baked for a further 20 minutes, sprinkled with parsley and sat down on my balcony to a pleasant dinner.

Nice and easy!!! I tried mine with brown lentils instead of rice and came out very flavourful. Also with nice vine tomatoes chopped roughly came out lovely.
If you don't have fire roasted tomatoes like me, just use reg diced tomatoes and add tomato paste + smoked paprika! It turned out soooo tasty my husband and I were eating the beef + sauce in spoonfuls right out the pan before filling the peppers!

Nice filling, need to try it some day. In Russia we usually stuff whole peppers with half-raw filling (the rice is half cooked and the meat is raw like the veggies and herbs, mostly carrots, onion and mushrooms instead of meat for the vegetarian type). Then we just take the frozen stuffed peppers out and stew them . Never tried baking them but I think it's also good) Thanks for the recipe.

Anyone who doesn't love a dish like this has several different problems! These are delicious. I add oregano basil thyme rosemary and a little crushed red pepper to mine.....all crushed in a mortar ....... a shot of worcestershire never hurts either!
Vegetarian Italian stuffed bell peppers are my favorite dish to eat. I seriously could eat it every day of my life lol. I never pre-cook my peppers for stuffed bell peppers. My mom taught me as a kid to simply add a bit water to the casserole dish to create steam, which cooks them through. But we make them standing up with the tops cut out (so the sides aren’t going to get soggy from touching the water). It doesn’t waste any pepper because you aren’t going to eat the core anyways. I never understand why people say that. We also love to add a slice of cheddar cheese on top of the hall, which has a great consistency after it is baked. Storing them is easy for leftovers. I have a ton of Tupperware from used yogurt, and they always fit perfectly in there.

I add kale in my stuffed bell peppers. I also use ground turkey and Indian influence spices (turmeric, curry, cumin, smoked paprika)

Seeing that I had some leftover beef and rice stuffing in the freezer I tried the following. I chopped some courgette,peppers and aubergine; coated them in olive oil and roasted them in a small dish for 20 minutes. I mixed the stuffing with a small pot of yogurt and spread it over the roasted veg. I sliced a tomato on top and sprinkled it all with grated Parmesan. Baked for a further 20 minutes, sprinkled with parsley and sat down on my balcony to a pleasant dinner.
I have made this recipe 3 times now and I love it! I don’t think I’ll ever use another one again!

Nice and easy!!! I tried mine with brown lentils instead of rice and came out very flavourful. Also with nice vine tomatoes chopped roughly came out lovely.

If you don't have fire roasted tomatoes like me, just use reg diced tomatoes and add tomato paste + smoked paprika! It turned out soooo tasty my husband and I were eating the beef + sauce in spoonfuls right out the pan before filling the peppers!

Nice filling, need to try it some day. In Russia we usually stuff whole peppers with half-raw filling (the rice is half cooked and the meat is raw like the veggies and herbs, mostly carrots, onion and mushrooms instead of meat for the vegetarian type). Then we just take the frozen stuffed peppers out and stew them . Never tried baking them but I think it's also good) Thanks for the recipe.

Anyone who doesn't love a dish like this has several different problems! These are delicious. I add oregano basil thyme rosemary and a little crushed red pepper to mine.....all crushed in a mortar ....... a shot of worcestershire never hurts either!

Vegetarian Italian stuffed bell peppers are my favorite dish to eat. I seriously could eat it every day of my life lol.
I never pre-cook my peppers for stuffed bell peppers. My mom taught me as a kid to simply add a bit water to the casserole dish to create steam, which cooks them through. But we make them standing up with the tops cut out (so the sides aren’t going to get soggy from touching the water). It doesn’t waste any pepper because you aren’t going to eat the core anyways. I never understand why people say that.
We also love to add a slice of cheddar cheese on top of the hall, which has a great consistency after it is baked.
Storing them is easy for leftovers. I have a ton of Tupperware from used yogurt, and they always fit perfectly in there.
This is my son’s favorite recipe. I’ve been doing it for years. But you gave some tips I’ll definitely use! As always.... your advices ROCK!

I made these on Sunday and they came out great. I didn't have spinach so I added zucchini and corn. I also added cilantro.
