What is fish maw? It is dried swim bladders that come from a large fish like a croaker or sturgeon. In China, it is considered to be one of the top four delicacies of the sea (abalone, sea cucumber, shark fin, and fish maw) Which we called “鲍,参,翅, 肚” in Cantonese. I am going to share with you on how to identify two kinds of fish maw and how to prepare them for cooking.
See instruction below:
Dried FISH MAW:
1) Rinse them well before blanching them.
2) pour water in a pot, add in the aromatics, and fish maw, turn to a boil.
3) Turn to medium-high heat boil for a couple of minutes. turn off the heat, let it cool down completely.
4) Soak them in the fridge minimum of 8 hours or overnight.
5) Clean them well and drain well. Use it right away or put it in Ziploc bags to store in the freezer.
Deep-fried fish maw:
1) Pour water in a pot, add in the aromatics, and fish maw, turn to a boil.
2) Add in the fish maw, (you can put a plate on top of them to soak them better in the water.) Blanch them for around 3-5 minutes until they are soaked and softened.
3) After cool down, rinse them well, squeeze the water, cook it right away or put them in Ziploc bags to store in the freezer.
花胶
1) 焯水前要洗冲洗干净。
2) 将水倒入锅中,加入红葱,姜和葱,跟花胶煮至沸腾。
3) 转至中火煮两三分钟。关火,完全冷却.
4) 放进冰箱泡发至少8个小时或过夜。
5) 清洁干净,沥干水分, 立即煮用,或者放入保鲜袋,存在冰柜里。
鱼肚
1) 将水倒入锅中,加入红葱,姜和葱,煮至沸腾。
2) 加入鱼肚,可以在上面放一个盘子,以便将其更好地浸入水中。将它们焯煮约3-5分钟,直到被浸泡跟变软。
3) 冲洗干净,挤干水,立即煮用,或者放入保鲜袋,存在冰柜里

Can you tell me what you did with all the collagen gelatin from the fish maw? Can share some recipes on how to use them?
Hello, did you mean the one after soaking? This video is more for how to prepare the fish maws, you can use the fish maws to make stews, braising with mushrooms etc. if you want to use the collagen gelatin, you can use for soups. But be sure the fish maw and water are very clean before soaking. I have two recipes that you can use the fish maws with it:

Can you still can use collagen? (That was been overnight)
I normally don’t use it. But it depends how you are gonna use the fish maw. If for soup I will just blanch it and put in soup. I do the whole process when I use the fish maw for stew. Tkx

What do you do with the collagen? Throw away?
Hi Charley, yes normally if we are using the fish maw for stews we don’t keep the collagen because it has some fishy taste. If you are using it for soups You can just blanch them then put in your soup. Referring to my fish maw recipe here: ruclips.net/video/tHXgrm5_mKg/видео.html
