1. you're inspiring with all you do! thank you for your time + efforts. 2. my fav vegan pb cookie recipe : 1 cup pb 1 cup coco sugar (I've never tried it with other sugars but I feel like you could probably use granulated?? maybe??) I think the coconut sugar is to help cut the sweetness. 1 flax egg AKA 1 tbsp flax + 2 and 1/2 tbsp water and set in fridge to set up for a min. mix it all together in one bowl, eye ball the size balls ya want (i normally do like an inch in size) and I lightly flatten mine with a fork both ways so it makes the lil crosses. 10 min at 350 degrees. It's been a min since I've made these but they were always a hit and unfortunately I don't remember the original recipe creator.

Where is the link for the nonprofit? You ate a lot of delicious looking vegan food in NYC. There is no end of it there. I just went out for some tacos in a Mexican style restaurant, and they were awful, but one of the only vegan things on the menu. The oil was cheap and old and there was no flavor. They still cost $16 with an iced tea. NYC has a lot of passionate chefs who care about what they offer.
