@DRD The Japanese language's base are the vowels, A I U E O. They're pronounced differently from English. They are closely pronounced the way Spanish (and other similar languages) pronounce their vowels and letters.

9:44 Such a touching moment where Wolfgang choked at a memory locked in taste and released with a flood of emotions. He choked and almost cried, then pulls out wine. This guy is so real and fun loving. Dont think I ever seen a TV Chef paused to reflect like he did.
I loved the nostalgia in both their creations - you could see Wolfgang being transported to his childhood when he took a bite!
Rie calling out George was the best part of this episode.

Wolfgang Puck to me is like the Julia Child of my parents. His descriptions, demeanor, general vibe just makes me smile.
2:14 those "purist people" that you're talking about if they watched the burger show enough SHOULD know that the hamburg steak is the OG start of the hamburger and mixing half with ground pork is a modern "slug" burger from Mississippi courtesy from George Motz the burger scholar so Rie got nothing to worry about lol

Sure but the burger she’s making isn’t a variation on the slug burger. It’s just fairly common in Asian cooking to mix ground meats together and even add other non meat ingredients to ground meat.
@@monhi64 it is much more complicated than that. The vector for the hamburger into Japan is the US military occupation. 1940s burger culture was transferred directly. The hamburger steak was popularised during the transition from post war austerity to the 60s boom. It was an affordable way to enjoy large ‘western’ style cuts of meat. The bubble era resulted in huge levels of tourism to Europe. The hamburg steak was refined as people brought back a taste for ‘authenticity’, so German style pork/beef ratios became a mark of quality. This fed back into Japanese burger culture. At the same time Japanese-French and Japanese-Italian became popular. If you really want to dig deep, there are still places serving post war Japanese-western, which has oddities such as westernised Cantonese sweet and sour pork done in a style that suits the old school Japanese palate. ‘Pork with ketchup sauce’. It was likely that western troops stationed in Japan were requesting familiar ‘Asian’ foods. This is distinctly different from Japanese-Chinese that you can find in port cities like Yokohama and Osaka. There is endless trade and cross pollination of cuisines.
Slug burger is mixed half with bread crumbs, not pork.

The fact that Brioche is the burger bun of choice for both Rie and Wolfgang Puck just cements its status as the best type of burger bun.

Spent part of my childhood in Wien and never ate hamburgers. In the United States I could not easily obtain good quality veal. So I would make Chicken Schnitzel as a substitute. The Schnitzel with trimmings served inside a brioche bun is a great idea. Vielen Dank.

I just wanted to say thank you to Alvin Cailan and George Motz and all the wonderful guests for all the burger related content as it has inspired me to get creative in the kitchen and I think I just made the best burger I've ever tasted in my life. You have this wealth of knowledge and experience that you so graciously share and I simply cannot convey the depth of my gratitude. I sincerely love you guys.

I enjoy any time I can watch Wolfgang do what he is so passionate about.
Before anyone gets the wrong idea... Wiener Schnitzel is not with Brioche Buns, but with "Semmel" (tar-emblazoned round bread roll) which is very typical bread roll. It's his version and that's fine. You just won't get that in Vienna typically.
He also calls it Wiener Schnitzel because it's calf meat, because Original Wiener Schnitzel is with calf meat. There are other variations (Chicken, Turkey, Pig) but they are called Schnitzel, not Wiener Schnitzel.
Original Wiener Schnitzel typically is fried with Vegetable Oil or Butterlard. And also doesn't need that much, it's enough if it's barely covering it.

I always love hearing people from other countries talk about what it was like to grow up. It's not really learning about traditional history, but you get to learn about different perspectives and how it differed from your own growing up

Wolfgang Puck bringing me back to my childhood. I loved the Schnitzel sandwiches from the street vendors in Germany. Nice brötchen for the bread, fresh cooked Weinerschnitzel, a little mayo or slaw. Schnitzel Sandwiches, Doner Kababs, and Pommes Frites with lots of mayo are all things I still crave, 35 years later.

I got to eat at a Wolfgang Puck establishment in Vegas years ago. Phenomenal is the word.
1:47 I've lived in Japan on and off over 16 years total. I always refer to the Japanese burger as like a meatloaf sandwich. I never thought of it as a salisbury steak sandwich. I think that's equally as accurate a description.
When I lived in Iwate for two years, one place I always ordered off the menu because in that super rural place there was no such thing as a cheeseburger, and I'm American, so of course I need a cheeseburger. I asked for the hamburg steak, on toast, with cheese. They actually changed the menu to include my sandwich. Another place by the way added "John's Katsu Curry Bowl" which was simply a chicken cutlet instead of pork.

A frisco or mushroom swiss are two of my favorites still today that I loved as a teen as well. The schnitzel is a big favorite, I prefer a jagerschnitzel myself with that brown mushroom gravy so good. All these looked good.

This has to be my favorite episode of the burger show
In Iowa and other parts of the Midwest, it's common to see a tenderloin sandwich, which is a pork schnitzel in a bun. I didn't realize this was regional cuisine until I went to college and put a schnitzel between two halves of a bun and got some appalled looks from my fellow students.
