      @@lilaznballaz1022 I know he is a chef with a lot of experience working in restaurants unlike George, but my point was more that he approaches food from a different angle than Alvin (who owns several restaurants) because he is also a scientist and writer, whereas Alvin is known for being a chef more exclusively.

      I feel like alvin's was weak compared to the others way too much lettuce and wonky seasoning. It was way more of an interpretation than an imitation. The other two were SPOT ON

    Nostolgia is definitely a big part.
    Big mac: Grandma treated me when she took care of me as a kid.
    Double double: Hanging out with the boys after class in High School.
    White Castle: Really bad part of Chicago I shouldn't have been in.

      @@JimNortonsAlcoholism i don't know man, he looked like he gained some weight and maybe like he started smoking weed, which is understandable since it was pandemic and he just moved to a new house iric. probably just stressed. actually he kind of looks younger with the long hair. he looks a bit unhealthier but also younger at the same time. it's weird. but i wouldn't say he looks like he was on a bender. and he's still productive. i wouldn't worry. people go through these phases. it wasn't televised as much before we had youtube and vlogs and a pandemic that made us watch creators do diy vids at home mostly without professional lighting and make up which often would operate in a studio setting instead or at least some professionals in the background.

    As a 7+ year in n out vet, you really did the double double justice kenji. Just so everyone knows you can always ask for extra spread for nothing on the side ;) you’ll never be able to perfectly replicate it without the specially made buns though, they are designed to toast perfectly and actually be stretchier and softer by heating, while just the edge stays toasty. Whole grill is the way to go my man and you nailed it.

      INO alum here, too! Loved seeing one of my favorite nerdy chefs (even though he doesn’t like being called that) do a double-double justice! Though, because working board was my specialty, I had to slightly critique the fact that we’d remove the spine of the lettuce and add the tomato after the pickles but before the lettuce. 😉 But he definitely made his burger smile! 🍔

    For me, the most nostalgic burger is the A&W Papa Burger. Up to 2/3 of a pound of burger perfection, served with fries and a big frosty mug of their signature root beer - it was like heaven on earth.

    My parents went on dates to the local White Castle in late-30s Indianapolis. They began taking my brother and I in the early 50s (8 years before I saw my first McDonalds). These were special days. At 77, my first choice for fast food is a bag of sliders with onion chips (followed by Long John Silver and Rallys).

    Thank you Mr. Motz, for helping bring me White Castle to Canada. I ended up having to make yeast buns since that's all I had, but it was white Castle sliders regardless. I also burned my hand topping/transferring the first burger from spatula to the plate too, even after watching you do it.

    McDonalds actually lists the ingredients for the big mac sauce on their website (in the UK, not sure about US) and he's right, no tomato ketchup.

    Except I usually only ask for the whole grilled because I'm embarrassed for some reason to ask for both 😂 and count it as a bonus if they accidentally give me both.

    Always fresh french fries hack: Tell them you want your fries unsalted. This forces them to dump a new batch of fries for your order. Ask for salt packets at the window. Rinse/repeat for the rest of your life.

    As much as this was a giant love letter to all things classic burgers and burger history... if you add mustard to one of those sliders, isn't that more of a Krystal thing than a White Castle thing? Like that's one of the critical differences between the two. 7:32
    It's hard to nitpick too much when y'all did so much work recreating these as accurately as possible. So much love. Have you all done a breakdown of the Krystal/White Castle situation? I'd watch that in a heartbeat.

      Yeah, White Castle sliders definitely do not have yellow mustard and if you get mustard packets there, it is always dusseldorf mustard. At least in Chicago and the suburbs, anyways. Maybe it's different in other states.

    I worked at Best Foods in 1998, the factory in Quebec who makes peanut butter, mayonaise, Mc Chicken Sauce AND the Big Mac Sauce. I don't know about the spices but one thing for sure 100%, it's not relish in the ingredients, it's diced pickles. I unloaded trains filled with barrels of pickles...

    Always remember Fast Food stuff is finetuned to the country. Eating a Big Mac in the USA and one in Spain will not taste the same.
    They also finetune colors for cars based on countries and so on.

    Alvin - today buddy, I made the sauce. I'm not a huge Big Mac guy anymore but yeah there was a time. I have about one a year now. Today I fired up the Kamado to inferno level and got some glorious medium ground chuck. Salted those puppies and they hit the grill. But. The Sauce. I made the Sauce. DUDE YOU NAILED IT. Thank you! Geez even my wife likes it!

      I mean I'm fairly certain the Mac sauce is a manufactured product. I.e., each location just receives a giant case of it each week that was made by robots in a factory somewhere rather than each individual kitchen actually making their sauce from base ingredients. That being the case, there's an absolute possibility that the manufacturing plant just has a giant machine that automates the whole process and can caramelize literally tons of onions at once, OR McD's could just bulk-source pre-caramelized onion and garlic paste for cheap from a different manufacturer. Ingredients like that become dirt-cheap when you remove the step of having to pay individual workers by the hour to make them in small batches.

      @@pennyfarting I don’t think anyone is suggesting that someone is out the back of the restaurant making batches of sauce, I just don’t believe that the caramelisation would even be a part of the mass production process. As I said, the sauce has been around for so long, before we even started to caramelise onions. I’m sure there are some cooked onions in there (likely boiled or steamed), but no way is there some delicious slow caramelised onions in there
