My mother has been on a low carb diet for a while, so all the pasta in our house is weird. I made spaghetti last night and I can't remember what type of pasta I used (maybe semolina), but it absorbed too much salt from the water and didn't have the right texture - also took 20 minutes to cook. Last night, I just had it so I only made a single serving of those noodles, but tonight when we all ate it, I made the chick pea pasta to go with the sauce..... and it was amazing. I think the chick pea pasta is even better than regular pasta. It blends so nicely with the sauce and has a great texture. If you want a healthier option, give it a shot.

I'm Italian. My relatives & I make our meatballs out of equal parts hot Italian sausage, ground beef & veal. I add a little dry red wine to my sauce. No sugar! If it's too sweet add a few springs of mint. We cook our sauce all day long. Serve it the next day with pasta! As you said, it's always better the next day! No jar sauce! 1/5/22: Okay, I made it exactly the way you do, except I added the mushrooms, oregano and pinch of sugar, and I have to express that it came out WONDERFUL! I have never added that much olive oil to my sauce after the fact, only when frying down my bell peppers and onions I add enough oil to cover the pan. It made it look and taste so velvety smooth, and I didn't even have to add a can of tomato paste to thicken it up (something I usually do) ...wow! I just had to touch base with you after making it. Great recipe! It made me hungry for my mom’s spaghetti sauce. She 'added chili powder' to her sauce for a little bit of 'added heat', plus a bit of sugar to cut the tomato acid. I also remember she added 'whole garlic cloves', and a lot of 'button mushrooms'. It was 'lucky to find a whole clove' on your plate. Your various recipes with collards and your Southern green beans are similar to hers, bringing back even more great food memories. And your style of cooking also reminds me of hers. She called it, "Put and Taste". You know exactly what flavors you are looking for. Thanks for your very enjoyable videos!

If she didn’t do that, the older boys would use up all the sauce. So the last ones to the table got plain noodles! It worked. And her batch was so big we’d fight over the leftovers the next day!! Uh stepped up your cooking game ? This recipe is a disaster ..
AB you need to watch an Italian make spaghetti and level it up from there ..
First of all you use 2 grated carrots , 2 Finley chopped celery stalks ,and a medium onion . ( I like half red and half yellow for the flavor dimension .) You cam also add the bell pepper for more flavor . Sauté those for about 2 minutes and add your garlic and mushrooms if you like as well sauté for another minute until the garlic is fragrant .. then you cook your meat cook the pork and beef separate to avoid cross contamination .. then combine the ingredients .. Add 2 cans of crushed tomatoes and a half cup of tomatoes paste or puree .. Then add a cup if red wine to balance out the acdity of the tomatoes Add your basil ,oregano or Illian season and bay leaf .. Bring to a boil and then lower the heat to a simmer for 4 hours .. If it begins to thicken add pasta water as needed ... This is a good recipe ..
Never put sugar in your sauce if you want it to be authentic .. once sauce is done mix in the spaghetti .( That is the authentic way ) and then plate it up .. And some freshly grated Parma and fresh parsley fir garnish ( side note ) Do not forget to salt your pasta well you should need very little salt in the sauce but you can use black pepper to taste .. ( Enjoy ) ... This recipe beats yours hands down ..

When it comes to seperating the meat from the grease I just use a collander/strainer then put a metal bowl beneath it to catch the grease so it doesn't go down the drain. As far as serving it I absolutely think it's better the next day, especially if you mix the noodles in with the sauce. I also like adding sliced mushrooms to it. I just been using beef though, never thought about using pork. Might have to try that next time.
