  • Hands down, lemon is probably my favorite flavor. Lemon meringue pie is one of my favorite pies. Lemon tarts are a close second with hand whipped cream and a cherry inside of a tiny graham cracker crust. However this lemon supreme pie may well trump them all. My first encounter with this particular specimen of deliciousness was when I was a pre teen. We had moved to Arizona from New Jersey where they had the Village Inn restaurant chain. Half pancake house, half pie house, Village Inn was a family favorite. One of those chains that evolved out of the diner era and moved right into the sit down restaurant era. When you walked in to the lobby to be seated, you were presented with a refrigerated case filled with delicious pies. So many pies! The standard apple, cherry, blueberry and peach double crust pies. The old favorite coconut, banana and custard cream pies and then there were these delicious beasts on the bottom shelf. Supreme pies! Pies that were such amazing combinations that it boggled the mind. I mean, who thought of these?! Surely they were most highly evolved super humans, who had incredible skills to be able to put together the likes of the French silk supreme pie, the cherry supreme pie, the pumpkin mousse pie and my personal all time favorite, the lemon supreme pie! One bite and I was hooked!
    We moved to North Carolina exactly 10 years ago. They don't have either Village Inn, nor their sister chain, The Baker's Square in my neck of the woods, so I am left to my own devices to make a version of Lemon Supreme Pie to satisfy and take a place of honor on my holiday table. This pie is almost no bake. You really need to bake a pastry shell for this one. Graham cracker just won't cut it.

    The rest of this pie is, well, easy as pie. To coin a phrase. Just a base of sweetened cream cheese with whipped cream folded in for good measure then poured into that pre baked pie shell and topped with your choice of lemon filling. I have chosen to use a good quality canned lemon filling, but you can also use a homemade version or my lemon curd recipe or even the old standby of Jell-O cooked lemon pudding that my mom always used for lemon meringue pies. Any of these would be an appropriate option for the topping. I topped mine like Village Inn used to, with swirls of stabilized whipped cream all round for a beautiful presentation.
    You will want to refrigerate this pie for at least 8 hours or even better, overnight to be sure of pretty and clean slices when serving. This is a great pie to make ahead for Thanksgiving and can be made up to two days in advance. But be sure to keep it in the fridge and not in the freezer.
    This pie was delicious and very comparable to the original version. The only thing missing was the flimsy metal pie tin that we used to get when we ordered a whole pie! Definitely a keeper and if you are lemon love then this pie is for you!

    THIS IS ONE OF MY FAVORTIE PIES ON THIS PLANET. Ever since Baker's Square left my state years ago I couldn't find this pie, or a recipe. Thank you for this Noreen. I'll be making it when my birthday comes around! :)

    I am eager to try this recipe! I worked for Village Inn for years, but now, their going out of business, so I am so gonna miss this pie! So, I know how theirs is made in the restaurant, i hope this recipe is very close! That cream cheese layer makes this pie amazing! Highly recommend this pie!

    Now I am craving that pie..... I just happen to live in AZ and I recently order delivery from Village Inn the other day and got piece of their Lemon Supreme pie for the first time OMG it's now my favorite. I totally understand when your son or husband said they could eat the whole pie, it's a sweet, tart, sour, lemony, cream centered blast of goodness with a flaky crust. Your video was excellent, thank you.

    Haha! Rick... dabbing his fingertip in to taste after each addition of ingredient to the cream cheese. That's funny how he said he'd eat the whole pie but he's not a fan of lemon? It must be awesome. I'm going to put this one in my recipes. I love lemon pies. =)

    Love Village Inn, I am in Phoenix have one right down the road! Banana cream is my favorite! I normally just get my pies there for holidays but might have to try this one! looks so yummy!

    Noreen, you knocked this one out of the park! I can't wait to try it! I remember when we had a chain of restaurants all over the Chicago area called, "Poppin' Fresh" which, at the time, was owned by Pillsbury. (Perhaps you're too young to remember that.) Eventually, Pillsbury decided to get out of the restaurant business, and all their places were re-named, "Baker's Square." Sadly, they have closed a number of their locations here in the Chicago area. So, that's the history on that! I still enjoy watching your videos. Best wishes to you, Rick, and your family. Although it may be slightly early, I want to wish all of you a Happy Thanksgiving, and a very Merry & Blessed Christmas!

    I had planned to make a NY cheesecake for Thanksgiving, but I just changed the menu. I've never had the canned pie filing, butI have found your recipes are true to your word. I'll be trying it out. tfs

      This particular brand is really good. I have used several of their flavors. The lemon is just like what I would make but is a bit easier when you are trying to do a bunch of other stuff and let's be real, why should we not use a shortcut if it is going to be nearly identical to what we made in the first place? Sometimes we are too hard on ourselves. I know I am always driving home the "homemade is best" but sometimes, especially when we are doing upteen things it is acceptable and nobody has to know!

      I just add instant clear jel to my cream before whipping. It stabilizes it and helps it to retain it's shape after piping. I don't know that this requires a video.

    OMG. If I want to keep it in the fridge for a few days, how do I cover it without ruining the cream on top? Do I leave the cream on top until just before serving? Looks so wonderful.

    Hi Noreen, I am loving the pie recipes. I like when you show pies that are unique to different parts of your country. I'd like to share with you, one that I grew up with and is unique to the prairies of Canada. It is called Flapper Pie. I am sure it exists under a different name elsewhere but check it out...graham crust, custard and meringue top. And don't expect it not to crumble when you cut the slices. I hope, if you haven't already, you can try it sometime and share with your family. Thanks again for the great videos.

      They are similar, but not identical. The lemon curd has lots of butter and eggs. The lemon pie filling has neither.

      We have three dogs and several cats. We prefer not to share them on camera because of backlash we have experienced in the past. I prefer not to go there any longer.

      Landon's channel Timmons because it is a piece of crap. I no longer use Kitchenaid. I use Bosch. This pie did not require a stand mixer. Only whipping cream. Hand mixer is enough.

      Hi Rita, you may already know this, but even if you use Splenda in baked items, such as pie, your blood sugar will still increase because of the other carbohydrates. Even if a pie crust is labeled as "sugar free" it will still effect your blood sugar because our bodies convert carbs into sugar. I'm not saying this to be rude in any way, I just know from experience (my husband has been type 1 diabetic since he was 3 years old). Unfortunately, most of the advertising out there for sugar free food is deceiving. In addition, even though it is contrary to popular belief, it is actually much healthier for your body to have real sugar when you have a sweet treat once in a while - raw sugar or local honey is best. :)

      Thanks for your comment. I never use artificial sweeteners. I believe they are poison. Even if they claim to be natural they are not once they are processed. Even the ever popular Stevia is processed so far that it is not actually anything close to what it is in nature. No one in my family is a diabetic. We don't have high blood pressure or needs for any type of special diet. I only share this with you so you will know not to expect that type of recipe on my channel. Real sugar, honey, turbinado sugar etc are all you will see me use. Diabetics can eat sugar, they must simply regulate it differently and understand the exchanges. Sorry do disappoint you. You can search for lots of channels here on RUclips that specialize in diabetic recipes.
