INSTANT POT Quick and Easy Meal Prep | PORK CHOPS for the week!

Today we are making a quick and easy meal prep using our Instant Pot! We are making a one pot pork, broccoli, and rice that is packed with protein, vitamins, minerals, and flavor! This is one of the easiest meal preps you will ever make.

Ingredients:
1 ½ cup Jasmine Rice, rinsed and drained
2 lb cubed Pork Chops
2 tbsp Thrive Market Bold and Blackening Spice, substitute favorite spine blend
1 tbsp Avocado Oil
1 tbsp Apple Cider Vinegar
2 cup Filtered Water
22 oz Frozen Vegetables
Set the Instant Pot to sauté on HIGH and when hot add the avocado oil. Add the pork and the dried spices and sauté for 2-4 minutes or until pork is slightly golden and partially cooked. Add the water and vinegar and deglaze the bottom of the pot. Add the rice and ensure all rice is submerged under the liquid. Close the lid. Press cancel on the Instant Pot and set to HIGH pressure for 4 minutes. Allow 10 minutes of natural pressure and then perform a quick release. Fluff the rice and then add the thawed frozen vegetables. Stir well. Spoon into meal prep containers and enjoy!
