I'm 82+ young years and only wish I had found you and your realistic style of home cooking about 60 yrs ago! I stumbled over one of your videos - the cherry tomato smashed spaghetti sauce with penne pasta and it has only been uphill since then! I have posted soooooooooooooo many of your videos, shouting your virtues, on my personal FB page. You Rock! You are a true gift to your own personal 4 member family. My wife and I bought an air fryer because of your early videos on the subject. The key was that you broke it down to the understanding that it is basically a miniature convection oven. Then BAM!! Everything made sense from there. We now cook just about everything we would have in a regular oven in the air fryer. It's a bit cheeky, but one of our favorite things to make is chicken wings. Spicy and crispy in no time. You've given us a lot of ideas to try out. This episode, the steak especially intrigues me - I'm thinking combine time in the sous vide followed by a crisp up in the air fryer. One more thing, the humus on the steak isn't something I've thought of although it is a staple of any Mediterranean steak dish. Thanks for the reminder.

I didn’t get a air fryer cause all my chef friends joked it was just a small convection oven. Bought one last month when I discovered your channel. Really great information. Just last week my first-ever air fryer -- a Cosori, no less -- was delivered; I bought it not knowing a thing about air fryers. I just read Amazon reviews and picked the small size because I'm cooking only for myself. I have LOVED the ribeye, the salmon, the Brussels sprouts, the green beans & summer squash that I've made and am looking for new and creative ways to use it. Thank you for all of these fantastic creative experiments! I'm on a keto diet so a lot of what you're doing I won't be able to duplicate exactly, but I can always "keto" a recipe.

I Just unboxed my air fryer yesterday and have already made roasted beat salad, brownies for desert. This morning I heated up leftover roasted potatoes and cooked bacon at same time for breakfast. For some reason my husband made hash browns in the middle of the afternoon( which were amazing) and for dinner I air fried two chicken breast and halfway through cooking added some carrots. I really resisted getting an air fryer because I thought it was just for reheating pizza, french fries or wings. I was definitely wrong. I may never turn my oven on again. Tip for the rice: before adding the rice, sauté some onion (regular, shallot, green or red, your choice) and/or some garlic. It will enhance the flavour and texture of the rice (the oil used will make it smoother)

I grew up in a latino family, we love rice, there is so much you can add to it to give it flavor. But the secret is too cook it in an aluminion or iron pot, don't wash the rice (or wash it once) add a little oil and salt, and the flavor is amazing.

If you put your cornstarch into some water, just enough to get rid of chunks, want it silky to touch, it will get rid of the stress of having chunks on in the pan.
Wheather you're thickening up soups or sauces, it's super easy and helps control how much you want to thicken it up as well instead of eyeballing it.

My son bought a small inexpensive air fryer about three years ago. I thought it was a waste of money and would end up in the shed along with so many other kitchen gadgets me and my wife bought over the years. Our kitchen is quite small so we keep the blender and food processor top of the refrigerator. That airfryer has stayed on the countertop and we use it all the time. It is especially good in the summer when you don't want to heat up the house. Bakes potatoes to perfection and is so much better at reheating poultry than the microwave is. I wish I'd had one of these when I was a bachelor living in a tiny efficiency apartment without a stove.

    - Cut the Halloumi in very thick frie shapes
    - Make a coating of Coconut flower and smoked paprika powder and coat the Halloumi with it
    - Pre heat the airfryer at 360 F or 180 C
    - Spray the fries with olive oil and put them in the airfryer for 6 minutes and shake them, then another 4 minutes until they are golden brown and crispy.

My mother in law taught me to take a small amount of the hot broth, sauce, soup, basically whatever you’re cooking and mix corn starch into that. Then just return it to the pot or pan and stir it in. It doesn’t water down your recipe, and it seems to mix so much easier that way. I’m not sure if this is the proper way of creating a “slurry”. I’ve honestly never heard that term used in cooking before, but I thought I’d share this info for anyone who’s interested.

Hey Mike, i noticed that the tortilla came out in a different position from the way you had put it in. I had realized that with mine also and I believe it's because of the fan (which disperses the heat) being strong enough to "throw" the tortilla around. One way i got around this issue was by putting something with just a bit more weight on it while it heats up. Something like a piece of fish, meat or even just having a simple ramekin to weigh it down has worked for me. Just keep in mind that it is hot when you remove it, hehe
