    For anyone watching, you are NOT supposed to use sprays like PAM in an air fryer. Cooking sprays often contain soy lecithin, which is less stable than high smoke point oils and can break down at the temperatures used for air frying. This can build up in your air fryer, especially in the basket or tray, and ruin the surface. Either oil it beforehand or put some oil in one of those small pump sprayers and use that instead. This is actually in the Cosori users manual or something similar.
    Adding an edit: Even if he is using safe sprays without soy lecithin or other chemicals, he does say at 3:10 to just spray it with whatever oil you have. He might be fine when referring to himself, but as someone making an informative video, shouldn't he mention that you need to stay away from sprays that aren't safe for the surface of the air fryer? If people watch it without knowing, they will spray whatever in their unit.

      Also: NO SALT DIRECTLY IN THE AIR FRYER! It will scratch the non stick layer and release toxins witch makes your air fryer as useless as a scretches non stick pan! Please be aware!

      There's organic avocado spray oil people can use as a substitute. This oil has a neutral flavor so it won't ruin anything.

    I've mastered chicken wings in the air fryer, without using flour. Let the wings air dry in the refrigerator on a wire rack for a few hours. Then lightly toss in avocado oil and some seasonings before air frying at 400 for 8 minutes. flip and air fry for another 9-10 minutes. boom. done and super crispy. No messing with flour.

    I took your advice and bought this exact air fryer, and I absolutely love it. I was also extremely sketchy about an air fryer (thought it was another trendy gadget that would just take up space) but the versatility, ease of use, ease of cleaning, and time it takes to cook are worth every penny.       I was pretty skeptical about air fryers as well. My parents had a toaster style air fryer and it sucked. Not sure if that style isn't as good or if they just had a bad one. Either way, I got a Cosori he used in some previous videos and I love it!

    I love your videos. You don’t D.R.A.A.A.A.A.A.A.A.A.A.A.G.G.G.G.G.G.G.G.G.G out the instructions nor show every . . . . . . . single . . . . . . . .. . . . step for 20 minutes. You get straight to the point and move on to the next recipe. No wonder you’ve got 4 ½ million subscribers ! I wish other RUclipsrs would take notes from you and proceed accordingly.     I marinated a whole chicken in leftover pickled hot pepper brine (salt and sweet), then cooked it in the air fryer. OMG. *OMG!!* BEST chicken I've ever made.

    When blanching (or, frankly, cooking) potatoes, the acidity and alkalinity of the water is critical. You want the outside soft, dash of baking soda in the water; want your potatoes done but firm, splash of acid in the water.
    Learned that from Kenji's roasted potatoes video and it changed my life.

      30 ml of white vinegar, to every 1000 ml of water works. Prevents the pectin structure from breaking down.

    What a fantastic video. Inspired to try these asap.
    You need to add a small amount of citric acid or vinegar when making stock. It helps extract nutrients from the bones.

    I just made these fries again and par boiled them in the morning and put them on a rack in the fridge for about 90 minutes. I used a little salt and baking soda in the boiling water. Then did the 2 step airfrying using some avocado oil. Very nice crispyness and potato flavor! I think there were more steps in your earlier version but these came out just right.

    After almost a year I finally opened my air fryer box last week😅Well now I'm throwing all kinds of stuff in there. Feel like a dummy bc this would've been PERFECT during the TX summer heat. Much like Carly, I'm very limited on counter space. Bought a mid grade fryer during those after Christmas clearance sales. Wasn't too sure I'd use it. It's also perfect for my son who struggles a bit in the kitchen. Now on the hunt for baker's rack which can handle heat of appliances. Thanks for the recipe book Mike!

    When I was a child, wings were considered scrap meat. They, along with hearts and gizzards, were about the least expensive parts of the chicken. If I recall correctly, they cost between 10 and 15 cents a pound. We were about as far from being poor as possible, but, as my mother absolutely loved them, they were a regular part of our diet. We almost never had them as a meal because my father strongly disapproved of us eating "that garbage" (aka poor people food🙄), but we regularly had them as a snack in the evening. That was in the early 70s. It's been crazy to watch them become them become so wildly popular and expensive over the years.

    I wish I had an air fryer in my dorm in college. There's so many things you can do with it and it takes up very little room. One of my favorites is a slightly more sophisticated take on a PB&J, simply by making the sandwich, spraying both sides with oil and tossing it in the air fryer for a few minutes. It's toasty, crispy, sweet and gooey all at once.

    As an apartment dweller, I too was anti-air fryer for a long time! Then I realised that most of the bread we toast isn’t actually sliced bread and gets squished in the toaster anyway. So we got replaced the toaster with the air fryer. Now we get perfectly toasted bread (hot cross buns, mini baguettes, brioche) from our air fryer plus all the other meals we can cook in it. Many of the recipes I experimented with came from this channel!

    Thanks. Great recipes and tips. The salmon is overcooked, so there is less time in the AF. I don't cook salmon in the AF because it needs to be babysat, and it almost always overcooks because you cook it until done and then remove it, and it keeps cooking until it's not ideal.
    If you use the AF to cook salmon, you must take it out very pink in the middle.

    I have 2 air fryers, a bucket style and toaster oven style, and they've replaced 95% of tasks I used the full sized oven for and some tasks I used to use a pan for like grilled cheese and warming up pizza.

    I cut a block of firm tofu and pour a marinade of low sodium soy sauce, sesame oil and garlic. Air fry and flip half way through. Yum! Just like Whole Foods!

    Hey, you mentioned in the teriyaki salmon recipe that the air fryer can also bu used to cook a full meal. The meal only looked like one or two servings, especially the broccoli. How do you cook enough roasted veggies for the whole family, seems a bit small given the volume? It seems like while roasting broccoli or cauliflower in the oven takes more time, you can also cook way more quantity than what the air fryer can hold.

    9:30 one thing I’ve always wondered about air fryers is how long does the crunch last? So that piece of salmon that is ready before your veggies - is it going to go soggy and change texture while you’re waiting for everything to plate?

    I really need to start buying whole chickens and cutting them up. I also would like to make my own broth too. And some for the dogs which has done without certain ingredients for their safety.
    There are so many good looking dishes in here to try. I have yet to try salmon in the air fryer vs the oven. The grilled cheese sandwich. Homemade fries. Yeah. This may take a little more work than buying the prepared stuff but it's good to know how to do and can be cheaper. I'll be picking up the air fryer book too.

    You should watch the channel Mary’s Nest on using the instant pot for making stock/broth. There’s no reason to use your instant pot as a slow cooker for 8 to 12 hours when you can pressure cooker for 2 hours and extract all that collagen.

      Higher temp if pressure cooking decreases the good enzymes. That's why slow cooking broth has more benefits. Sally Fallon Morell is a French chef who explains it in detail in her book

    The thing I would add to the chicken wing recipe is a heaping teaspoon of corn starch. Gives an extra crispness.

    for french fries, i do skin off and crinkle cut for more crisp. also do first fry at 330 for 14 mins shaking basket half way and then 380 for 20 mins shaking basket every 5 mins. also parboil for 10 mins before everything.

    8:20 - just made this, only instead of salmon I had some grenadier. And it was delicious! Had some stir-fried veggies on the side and good fluffy rice. It was heavenly! Cant wait to try more of these air fryer recipes! :-) Tomorrow I'm already planning to fry some tofu! :-)

    Just to share- when we are making home fries or similar we par cook the potatoes in the microwave on a covered plate. They steam cook essentially. A little faster than boiling?

    I’ve had the xxl airfryer for two years and it’s changed my cooking world as I rarely turn the oven on now. I joined a Facebook group for my airfryer and there are thousands of recipes and ideas that you would never normally think of. I think people get put off by the word “fryer” I like to call it an air-cooker

    Mike, have loved your journey for the past decade! thank you so much for all the inspiring videos to improve how to cook! looking forward to your moving forward adventures as well! love my ninja air fryer! i have a traeger smoker but it was so time consuming so i got a ninja air fryer woodfire. check it out! air fryer features plus adding the smoke qualities still with the quickness! plus, it has a cold smoke feature to cold smoke cheese so you get quality flavorful cheese to shred, grate, etc without "sawdust" lol

    Whats the spray you use? We don't have spray cans like that in the UK I don't think. We have crappy ones that squirt a bit of oil but that one looks better

    Pressure cook your stock! High pressure for 45 minutes and you're done. You'll have the jiggliest, richest stock in a fraction of the amount of time, with zero scum!

    Thanks Mike, I've Purchased the book & can't wait to get stuck in.
    Since I'm from Australia (metric weights & measures) I'm glad there aren't too many conversions to figure out as there are in a lot of American recipes. Cups + spoons are fine, and a pound is 440g or there about, and most things in Aus supermarkets are packed in Kilograms or half kilo packs (such as minced/ground meats) so 500g so close enough not to mess with your recipes.
