Lovely tutorial. Your peacock is stunning!!
The reverse appliqué piece you showed us is called a Mola, made by the Guna people of Panama and Colombia. A traditional fabric art which is sewn into a blouse and worn by the Guna women.

Hello from Texas. I have "had a go" at the applique. Just a helpful hint. When I cut my patches out of fabric, I like to use Mod Podge for fabric. It is washable and keeps the little peaces from fraying. Mix it half and half with water and brush it on the back side. Let dry overnight. You can cut out your designs and sew them down.

Another great. Video I have come across! You are a great teacher!
Another technique to turn edges over I have used, it has cut down on bulk is sewing a thin piece of cotton fabric, tulle etc., put two pieces together, right side together. Then sew all the way around your shape. Slash down the middle, turn inside, then applique on to your background fabric after cutting out bulk material and ironing it.

I'm going to guess I'd have to do a sturdy stitch around the entire thing and then cut close to the edge of my stitches... or maybe I could leave a bit of the fabric and do the tucking under technique? Hmm. Just thinking out loud, I guess. 😊
