You don't have to sear meat first (unless it's ground beef), though if you want you sure can. It does add depth of flavor. I try to keep my recipe steps low, since we are crisping the carnitas in the oven at the end, I feel there's no need to brown before hand as well.
Ham is the entire back leg of a hog. Picnic ham is the front leg and shoulder of a hog. Grocery meat departments sell it as "PorK Picnic" or "Pork Picnic Roast." It's pretty easy to find in USA. Delicious.👍
