Words I didn’t think I’d hear when making a cocktail: First let’s make a batter.
For those asking about scaling, I just made it at 1/3 of the recipe (using 2 eggs). The batter came out to exactly 1 cup, or 8 ounces, or 4 drinks. So the full recipe should yield 12 drinks.
Turned out awesome btw - you should definitely make it.

Try the cocktail i make at my bar in verona, italy, for the winter:
I call it krampus
1.5 bombardino or zabov, an egg liquor typical of northern italy;
1 whiskey, i started out with honey jack but i think regular jack or any bourbon can fill the need;
1/2 or 3/4 (depending on ur taste, i usually go 1/2) amaretto disaronno
Egg white
Shake
Serve in a cup.
This sounds amazing but I don't think I've ever seen an egg liquor in my area :(

@@hydrogehtab no the egg nog is a very different beverage, this is actually a liquor and has a long shelf life.

This was good! I toned down the liquor and replaced the cognac with bourbon. Both were delicious

I really like the crescent city variation
Simple syrup
2 Tbsp. roasted chicory granules
1 cup demerara sugar
1⁄2 cup cold brew or strongly-brewed coffee
3 large eggs, separated
1⁄4 cup granulated sugar
8 oz. Cognac
2 Tbsp. plus 2 tsp. Herbsaint
4 cups whole milk
Whole star anise and freshly grated nutmeg, to garnish

The name of this drink makes me think of the cartoon.
A good trick I use to separate egg yolks from the whites is to crack the eggs into a bowl making sure not to break the yolks then take a empty Dasani or other water bottle with the nozzle up the yolk and lightly squeeze on it the suction pulls the yolk from the egg whites leaving you with just a bull of egg yolk

I really don't understand why people insist on using the shell or some kind of egg contraption to separate their whites from their yolks. Just use a clean hand. You're gonna get egg on your hands anyway, and you can rinse it off in like 10 seconds under warm water. Using the shell greatly increases your chance of puncturing your yolks.

The best way to separate eggs is through your fingers. I have a lot of gadgets that attest to that.

Alright. Remember that Pro Egg nog with the anejo tequila and amontillado sherry from your egg nog 3 ways video from last December? Well I concocted a bottle of that and it has been sitting in my fridge since February 1st of this year and I'm wondering if you think it will be either aged to perfection or undrinkable. You said it would last 'indefinitely'. Note: I pasteurized the eggs, and the bottle had an airtight seal. Tis the season!

My man out here drinking a souffle. If anybody's nervous about using raw eggs in cocktails, pasteurized eggs are available at the grocery store but if you can't ever find any or don't want to buy a whole dozen you can pasteurize your own eggs at home with your own immersion circulator/sous vide machine.
You do them at 135 f/57c for about an hour and 15, then chill them in an ice bath. They should at that point be pathogen free but still indistinguishable from a raw egg in most applications.
