I discovered HidaMari Cooking today and started watching her videos at once. I love that she makes her videos without any music, sometimes it's better just to listen to the sounds of water pouring or a knife at work. Also I've seen a couple of videos with mousse cake, desserts, etc. and I loved it, mostly because mousse is my favourite addition to dessert. Have a nice day :)
Yall I tried hidamari's recipe and it turned out awesome! ~Note~ I added 1 tsp of baking powder And 1/2 tsp of baking soda As she didn't use any I was a bit concerned of my cam would rise or not, hence the addition. Also I baked it in a 6 Inch pan At 180 Celsius for 25 min... And turned out amazing! I managed to get two thick layers and one thin layer out of it! Hope this helps ✌️❤️😉

for those who are considering trying this recipe: i've just done it myself, with some tweaks to the recipe; instead of using rum, i had used rum extract (as I cannot access actual rum). I also added a teaspoon of baking powder to the dry ingredients for the sponge cake (sifted with flour and cocoa powder). with sponge cakes, the fluffiness is created by the technique used to beat eggs. normally, the egg white and yolk are beaten separately, but in a recipe such as this, they're beaten together with sugar for long enough to become saturated with air bubbles. you're not supposed to use baking powder, but i did regardless because i am not experienced with sponge cakes and i knew that i would not get the cake to be fluffy enough otherwise. I doubled the recipe for the cake batter, and both cakes came out slightly smaller than the one shown in the video. so for other beginners like me, i suggest using baking powder as well. also, for those wondering what type of white sugar to use, as it wasn't specified in english: sponge cakes are typically made with caster sugar, which is white sugar with finer crystals than regular table sugar. granulated sugar works too, but the crystals are less fine. as for the icing, you could either use powdered sugar or confectioner's sugar. regarding the whipped cream icing, don't be afraid to use an electric hand mixer if you cannot whisk fast enough. --- i made this cake for my sibling's birthday, and i can't wait for them to try it out. thank you for posting these recipes, your demonstrations are really helpful ❤️

@@hanarikako2959 i'm glad, i had similar problems with the language barrier; luckily i had some knowledge already in baking. comments from people who have recreated recipes online have helped me many times. for the future, some grocers sell cake flour along with the standard all-purpose flour in their baking aisles. i recommend the king arthur brand which should be available in u.s. and u.k. grocers

I think you can search for knifes that a chef uses. They are usually very sharp and have a sharp edge, so if you put in the right keywords in a search bar, you might find them

she doesn't touch the ingredients with her hands a lot. and maybe she freezed the chocolate before chopping it.
I think the weight + sharpness of the knife really matters when you're chopping chocolate

回る台からお皿などに上手くうつす方法が知りたいです、
パレットナイフで回転台のケーキを持ち上げたときに手でケーキを傾けさせてパレットナイフにうまく乗せてそのままお皿まで持っていき、お皿に移すときケーキを傾けさせる感じでのせてお皿とケーキの間に手を添えてパレットナイフを引き、そっとお皿に乗せる。私はこの方法で毎回やってます。

スポンジケーキ、難しいですよね。
この生地はココアが入っているので、工程②で混ぜすぎてしまうと膨らみにくくなってしまいます。
味は変わってしまいますが、ココアの量を半分の5gにする、もしくは
後で加える生クリームとココア5gを混ぜて、最後に生地に加える、のが良いかもしれません。
あと、オーブンの予熱がしっかりできていないと膨らみにくくなってしまうので、予熱完了してから10分ほど運転させておくのも良いと思います(もしやっていたらすみません!)
