That's a great question, and you are exactly right. I like to color my icing prior to thinning it down for that exact reason. If you are using liquid coloring you may need to use less water when thinning to your optimum consistency. Gel or powder food coloring you may need to use a bit more.
The icing will not melt once it's on the cookie. It will actually dry and harden. It may take longer to dry and harden if you live in a humid area, otherwise temperature will not affect it.

Yes, you can use a scribe tool, toothpick, or other thin pointy object to help smooth the icing. That won't help with a steady hand, necessarily, but it will help clean up some mistakes.

You will only need a small amount for outlining. It takes approximately .5oz to flood a standard size cookie (3"x3"). If you have a scale, you can actually make a rough calculation of how much icing you will need and divide it accordingly. But I typically will make one small bag for outlining (like what you see in the video), and the rest will be flood.

Great question! They are really only an issue with flood consistency. The weight of the icing when its thicker seems to supress the air bubbles from forming.

If adding small details you can let the first layer dry for 10-20 minutes before adding something on top. However, if you are going to be adding anything really dark on top.of a light color (black on white), you will want to wait for and hour + to make sure the colors don't bleed.

Will this recipe last in really hot places? Where I live is really hot and I wouldn't want the frosting to melt when im storing it.

If adding small details you can let the first layer dry for 10-20 minutes before adding something on top. However, if you are going to be adding anything really dark on top.of a light color (black on white), you will want to wait for and hour + to make sure the colors don't bleed.
