Nice recipe from the Chefs. Yes,it does not have green chillies or red chillies or curry leaves. All these do alter the taste. If you go to Karnataka,channa has a different taste because they add Tamarind and Jaggery. The same channa tastes different in Bombay. Varying the spieces and the ingredients will bring different taste. I have tried with Hummous which is a diffetent taste. Goes well with Chappathi Chola Batura and pulka

it will not be sour , I have been preparing the same way as shakthi Krishnan sir since 10 yrs ...we are adding chilli powder, coriander powder, ginger garlic , and the caramelized onions will balance it with channa masala ....and I will add a 1 tsp of sugar at end to balance the taste ....u can butter too....but I will add oil+ghee in the beginning to fry onions ...will not add butter at last...Try my method and let me know ...Onions should be more and tomato should be less!! Imp tip -----> u should put correct quantity of tomato ,chill powder and chana masala and sugar to get perfect taste...if tomato added more, it will be tangy ...if u add chana masala more, it will be bitter too, if u add more gg paste, gravy will be sharp ....quantity decides the taste !!! after more trial and error, I found all these insights...Hope it helps you !!

Imp tip -----> u should put correct quantity of tomato ,chill powder and chana masala and sugar to get perfect taste...if tomato added more, it will be tangy ...if u add chana masala more, it will be bitter too, if u add more gg paste, gravy will be sharp ....quantity decides the taste !!!
