Kadalai maavu pota bajji mathiri taste varum. Always use corn flour, rice flour and can also add wheat flour for frying. Neutral taste. It will not overpower the original taste of the food

Par boiling the cauliflower is very important. This way the worms (There are usually worms or bugs in the cauliflower florets) will die in the boiling water and sink to the bottom, plus the dust and dirt in the cauliflower will be cleaned. The salt in the water will be anti bacterial. Plus this way every cauliflower is evenly salted. EIse like the man in the video you need to spread and mix the salt. And there is no guarantee it will be properly mixed in. It is a misconception that cauliflower won't be crispy if it's boiled before frying. He says he washed the cauliflowers in regular water to remove the worms. Good. But still the texture of the cauliflower is not going to change. Try par boiling the florets in hot water. You will see a layer of scum floating on top. With the direct frying method, the cauliflower is not at it's optimal. I always par boil the cauliflower (You need to be very careful about the boiling time and check the florets frequently. You also need to be mindful of the oil temp and frying time) and then I drain the water and let it sit in a colander. I then toss in the flours and spices. Due to the moisture from par boiling the florets it sticks very well to the cauliflower. I then sprinkle some water, and do an additional coat of the flour and spices, sprinkle a tiny bit more water and then it's ready to fry. Best cauliflower fry. If you don't par boil it, it will feel like eating raw cauliflower. It doesn't taste that nice at all. The oil doesn't do a good job of cooking the cauliflower good enough. Par boiling makes it al dente inside and the coating makes it a crispy outside. These non-boiled variety tastes bad. I have tried it in hotels. Also they are very oily because the florets are "cooking" in oil. The longer the are in oil, the oily it becomes. You par boil before? The fry time is less. Flash frying. Less oily. Also: Do not add lemon. Yes it is a practice to add lemon juice to cauliflower fry. But don't do it. Acc to science adding lemon juice and frying at high temp turns the citrus toxic. Squeeze the lemon after you fry it and enjoy.
