    As the population ages people will have those issues. I already do as I’m in my late 60’s. But I have a chair on wheels that I sit on and I have a desk in my kitchen where I prep sitting down. You just have to readjust how you do things. I refuse to give up until I can’t sit lol. I’m still canning away. I’m not as fast as others but I get the job done!

  • @KellyS_77
    @KellyS_77 11 месяцев назад +1

    I'm kind of surprised that NCHFP hasn't never reevaluated the headspace recommendation for apple pie filling. It seems like maybe it's something to do with the clearjel? Maybe because it's hot, then it cools while you're mixing in the apples and filling the jars, then gets heated up again? Normal cornstarch doesn't do that when you cook with it, but clearjel is modified to be able to thicken as it cools, get liquid again when heated, and then rethicken (which is why it works so well for home-canned pie filling).
    The way to beat the peeler would be to get one of those (manual) gadgets that press down on top of the apple and it cores it and slices the apples for you. I hardly think of it as a "gadget" its just a super simple (and fast) way to core and slice apples for kids or grandkids to dip in peanut butter. They're like $5 or less, but it's worth looking around for one that has "wedges" the right size for you.

    I buy "utility" Golden Delicious apples for pie filling. They are apples with spots & blemishes. I use the hand crank peeler, corer & slicer & it works okay. I'm sure it would work better on more perfect apples without blemishes.

Fermented Homestead may have some directions…can’t use for canning, because I have no way to measure acidity, but oh how amazing the salad dressings I make taste. Try it!

    I just purchased a Norpro apple peeler corer slicer. Like you I like thicker slicer for pie filling so I only use the peeler option. Then I use an XOXO corer/slicer. What a difference! I did 6 quarts in half the time of hand peeling! Yay.
    My only issue with canning is that my apples break down more than I like.
    I used Macs and Cortlands. Any suggestions on firmer apples? I live in New England and these are what most pick your orchards offer.

    Hi Lisa, I messed up my applied pie filling. I put 3/4 cups of clear jel to 7 cups of apples. They siphoned, but t hey all sealed. Are they ok? I did 13 jars.

    I am putting that apple peeler on my Christmas list. I canned 30 qts apple pie filling, 10 qts of apple slices, dehydrated 4 qts apple slices, 30 pints applesauce and have both dehydrators full of apple cubes, with enough prepared apple cubes to refill both the dehydrators. My back has not been a fan of all this peeling

    That peeler will be my ability to can apples due to my fingers and back! Thank you🥰

    I have that same peeler! It was a real lifesaver for me when doing potatoes! I went to go use it this year, and the darn thing wouldn’t work. Probably user error, lol!
    Also, everyone has different back troubles, but for me … I find that having a soft office chair in my kitchen, allows me time to sit and work when I need to.

    You use the apple cores for apple brandy, and the apple peels can make apple syrup..,

    Wow I had one of those about a month ago and didn't know how to make it work. And gave it away. So glad you showed this vido. Thank you for sharing.
