      😂😂😂😂 my son has an annoying neighbour ( in the UK) who lives in the adjoining terrace house who has Siri on all the time. When they go out he shouts through the wall hey siri power off 😂😂😂

    Pam: after looking at the fallen apple vinegar video. I believe your apple tree is a Blushing Golden apple tree. They are an older apple variety and are no longer available for sale and have not been for some time. The only way you can get one now is to have it custom grafted. My children ate bushels of Blushing Golden apples that were dried. My dehydrator holds about a 1/4 of a bushel of apples and I would dehydrate them put them in a half gallon jar and my hubs and kids would devour them while watching tv. I purchased so many of them that the orchard owner kept asking me how many kids do you have. I never bought less than 3 bushel at a time. Blushing Golden is a great all purpose apple.

    Making apple crisp with oatmeal crust and topping is quicker and maybe healthier than pie and uses the same filling!

    I've canned applesauce, made apple cider vinegar and baked apple pies. Next apple pie filling and dehydrating...my tree is bursting.

      That is what I did with my apples. I made several jellies and about 30 jars of juice. I had so many apples from my tree this year, they were just a falling, I could not keep up!!!

    When I first learned to can from you, I followed your recipe and canned apple and mailed it to my daughter in Michigan. I was not able to be with her for Thanksgiving, but in a way at least my spirit was there because she was able to make her apple pies from my apple pie filling. Thank you.

    I just cut up my apples and freeze them. They make a great gluten free, sugar free apple crisp.

      My freezer is completely full, otherwise it's a good idea. I let the apple slices sit overnight in the fridge with 1/4 of the weight sugar added. They build juice, and all that is canned then. It works as well without clear gel (we don't get that here).

    I love apple pie filling. I have been making it now in pint jars (along with ALL other kinds, triple berry, peach, blueberry), and I open one and use a tsp full in my homemade yogurt every morning with my homemade granola. It is SO yummy! GREAT video. I have to say, whenever I have questions about something, I ALWAYS come here to your channel! TY so much, for all you guys do for us!

    I absolutely love your videos. I’m a new canner, just bought a Presto electric last fall. Canned peach pie filling, spiced peaches, corn, cowboy candy - all big hits! I’m learning so much! I’m excited to learn about steam canning. We’re an older gay couple looking to save on food by processing ourselves, no preservatives, and having shelf ready meals for when needed. So thanks Pam and Jim for the education and being downright nice folks! I trust your processes where not so confident about other canners.

    I found using an old fashioned flour sifter or mesh strainer with holes big enough for sugar granules more thoroughly combines dry ingredients.

    To make a quick apple crisp you can take a couple oatmeal packets and cut in a 1/2 to full stick of butter til crumbly. Press on apples and put in oven. 35 minnlater you have a apple crisp. Apple crisp this way was one of the first things i learned to cook as a kid.

    I did half pints, to use in my pie iron when cooking over an open fire. You could use these in your trail grazers ,camping supplies. I grew up using a pie iron camping and love mine to this day.

    hi i read that you can reduce the clear gel down to 75% and i tried it and it works very well ,,its not very thick and better to work with.

    Hi Folks, I just wanted to take a moment to thank you for your video about Botulism and the Insta Pot Max. Certainly food safety is paramount! I learned so much from you. You put a great deal of work into that video with all the research!
    My next canning purchase is a pressure canner of some sort. I've been on the fence about what tool to buy because I find it annoying to buy one tool that does one task. And I expect my pressure canning story to be in smaller batches like 4 pints at a time. Which your video gives answers to both of those concerns. Your data driven Insta Pot Max video met a need in season for me thank you. Much respect appreciation for all you do!

    After hand processing 20 pounds of apples last year (and paying a painful price), I bought that gadget. I haven’t used it yet, but I’m going to this week. There’s nothing better than having apple pie filling on my shelf to make a pie at a moment’s notice-without having to dirty any dishes. I used the USDA recipe and made a jar of my own British apple pie spice. Cardamom makes it really special. Thanks for the demo, I ordered your steam canner, based on your research ❤

    My hubs loved among other apple things, pie!!! One year I went insane with buying orchard bushels of apples!! I canned among all the other goodies, quarts and quarts of pie filling. It was our Sunday thing all winter in the snowy Pocono's. Homemade icecream, and an apple galette. I miss those days.

    Great video. Pam, I have the Kitchenaid apple corer, peeler and slicer attachment that works great. No hand cranking, turn the mixer on and it does all the work for you. It is fast.

    Another winner! I like to watch several channels using the same recipe/processing because it see!s to stick better if I see how.different people cook. Then, when I go to actually !along the recipie, Pam, I come back to you, yours are always the best organized. You get right to is and don't waste.our time babbling. I'm excited to make my own steam canmer, I know just the pot to use! 😍

      You can make apple juice that way, but I find it isn’t very good. I make it with my juicer and then use the steamer/juicer to heat it up for canning.

    Looks great! I just got a steam canner and look forward to using it! I had Peach Pie filling canned from last season, and recently opened a jar, heated up and put over vanilla ice cream! Easy peasy and so good!!

    I was looking at the recipe you linked (healthy canning) and noticed that it says to measure the apples after they are blanched. I believe you measured before blanching. "The measurement for the apple is for already-prepped apple. After blanching, that’s 3 ½ cups in volume of blanched apple, and still around 500 g in weight."

    I watched this video, used your Amazon recommendation for clear gel and the peeler/corer, and they were delivered within 5 hours! lol. Unfortunately, my tree bent over from the huge harvest even after I thinned the clumps, I couldn't reach some of it with a ladder. Making vinegar (1 gal jars arrive tomorrow) and freeze dried thin slices for snacks. Applesauce is next! I'm ordering the canning scoop after I saw it has a hook for the pan--it is so handy and less mess.

      In the spring, when the apples are about 1” in diameter, thin the apples down to 1 per cluster, taking out all but the largest, usually the middle one. Also, thin them so that they are no closer than 6” apart and there are none on the last 6” of a branch. That will give you a better amount for the tree to handle each year.

    Loved your presentation. But I hated it too as our apple tree finished 2 weeks ago. Love apple pie. Will do it next year. I'm having a lot of fun with the canning. Finally started using my canned foods to make dinner. Such fun.

    To keep "fresh" apples, you can wrap them individually in newspaper and keep them in boxes in a root cellar type of situation. Not for tons of them, as they won't last as long that way, but they generally last until the next apple harvest.

    This will sound crazy but I saw a RUclips video of a guy and gal who used his power drill with a wide bit on it to jam down in the apple. He laid the drill on its side on a towel and held the little peeler on the skin while he turned on the drill to rotate the apple. Then he handed off the apple to the gal and she cored it. So so fast. So that is the way we do it every year as we can do a bushel in half the time we did with the apple peeler that attaches to the counter. This sounds more complicated than it really is. This video can be found on RUclips or I can send you a little video we did. We are laughing our heads off as it was going so fast! Thanks so so much for this apple pie filling recipe. I can’t wait to try it!

    What I have found is when I use the apple peeler it cuts the apples, smaller. Therefore, you get more apples in one jar. If you cut them in bigger chunks, you probably would’ve had 7 quarts.

    I have one of those peelers, but the apple were shaped too funny to use. I've started using a salad shooter after I peel & core. It works great.

    For years I used a similar recipe that used regular corn starch. It worked but did separate in the jars over time. Tasted fine and never went bad. Once I saw that I should use Clear Jel I am converting to that. First I just did a straight substitution in the old recipe but I will try this recipe and hopefully will have a nicer product. Thanks for all the good info. I thought my original recipe was a “good” recipe and never realized that regular corn starch was a no no until I started watching your videos and then checking closely with the usda approved recipes. Thanks!

    Great recipe thanks for sharing , ended up with 6 quarts with this recipe, really packed them in the measuring cup with some leftover filling so will add a few more apples in the next batch . Maybe 2 more cups to get the 7 quarts the recipe says it will make .

    Your apple pie filling looks wonderful and steam canning technique is so much easier than full water bath canning.
    After seeing your previous videos on steam canning and reading some extension service postings on steam canning I finally tried it last night when making green tomato salsa. I am thankful that you posted information on this as for many years it was not an approved technique and I would never have known that it had been approved without your videos. Thank you!

    Hi Pam and Jim from Australia , watched many of your videos and i have not canned any thing as yet but i have a few apples i may try. The clear gel can you use potato starch instead? When i made some apple hand pies the recipe called for potato starch as it makes a clear sauce not like corn flour which makes a milky look.

    Clearjel is expensive! Why not just can the apples and when you want to use them thicken the product with regular corn starch? Thanks for your great work!

    Thank you for this informative video. Can you tell me if there's black on the inside of my lid (doesn't wash off) that was on my home canned chicken, is it okay to eat? Chicken smells and looks fine so am wondering if it's a chemical reaction to the broth. First time canning chicken and canned it last fall.

    If I used flour in my pie filling and canned it, is there any way to still use it? We did eat several jars before I saw that it could grow botulism.

    I have a few more apple ideas. Apples slices drizzled with caramel sauce and freeze dried are delish! I’ve made these several times and they’re gone almost as fast as I can get them out of the freeze dryer. There are some moderately priced cider presses on Amazon that have really good reviews. I don’t have a press yet but I’m researching them. I haven’t tried apples in my steam juicer but I think it would be worth a shot. I’m guessing, if it produces juice, it might be a really nice braising liquid for pork.

      A steamer juicer works to juice apples, but it’s not very good, in my experience. I have an Acme juicer that works well for apples, then I put the juice in my steamer juicer to heat up slightly and decant into my jars. I find if I use a mixture of types of apples it makes really wonderful apple juice!

    I love that machine! I agree with you about using it for apples. Plus, I love all the manual gadgets. Even my food mill is non electric. My question is have you tested the steam canning function on the IP Max? It’s been an excellent electric canner for me and I really don’t want to invest in another canner. I trust your science.     I’ve been loving my steam canner but I just did pizza sauce. It was a 40 minute session. So I used my regular water bath canner. 🤷‍♀️

    I’m going to do this Pam. It looks delicious. If the apples were measured in grams wouldn’t it be more accurate than cups? I find cup cooking difficult as I’m in the U.K. and used to weighing things!

      Well, it probably would be, but we’re not used to doing that as much in the US, so the recipes haven’t been tested that way. For this type recipe, it wouldn’t make that much difference anyway.
      Edited to add: I just saw that she added a recipe in the show notes with weights, it’s the Healthy Canning one.

    I have a question about steam canning. If I put three inches of water in my pressure canner and then wait until it vents for 10 minutes, the canner will be full of steam. At that point, I could put on the juggler without locking the top of the canner in place, or I could just allow it to keep venting while I started the timer. Would this work in lieu of buying a steam canner?

      It would get too hot, I think. There would still be some pressure in there, even without the jiggler on it. You could use it for a water bath canner, though.

    Is there any safe substitute for the lemon juice when canning apple pie filling? I am allergic to citrus. I see some suggestions of white wine or citric acid but was not sure of if they would supply the right amount of acidity needed to can.
