you're welcome: :) knob of butter 3 onions, finely sliced 3 Tbsp flour 1L milk 500 g macaroni 100 g cheddar, grated 100 g raclette or gruyere, grated (for stringiness) parmesan (no amount given), finely grated 1 tsp prepared english mustard 1 generous tsp mango chutney couple of shakes of worchestershire sauce topping: 3 strips bacon, chopped small fresh thyme garlic some breadcrumbs (maybe a cup or a bit more) 1. saute onions in butter - 15 min - browned and very soft. 2. add flour, stir 3. gradually add 1L milk - let it simmer and thicken while cooking pasta (only half-cook the pasta, about 5 min) 4. grate all cheeses together 5. take out some of the pasta water, and set it aside 6. take sauce off heat - add cheese, reserving a handful for on top later 7. add mustard, chutney, and worchestershire 8. add some of the reserved pasta water, til creamy and sloppy 9. add macaroni and stir 10. pour into rectangular baking dish and sprinkle reserved cheese on top 11. bake at 400F for 30 min 12. saute bacon, thyme, and garlic 13. when bacon is lightly golden, add breadcrumbs 14. stop when it’s all crunchy and golden 15. mac’n’cheese should be well-browned on top 16. plate it with some crunchy bacon/breadcrumbs on top

I keep searching this video to remind me of proportions, so I finally wrote it down to share the recipe with family (in US measurements) - thought I'd share it with you too! Jamie Oliver’s Ultimate Mac & Cheese 3 Onions 2T Butter 3T All-Purpose Flour 4C Milk 1T English Mustard 1T Mango Chutney 3 Swigs Worchester Sauce 1lb Macaroni Pasta 4oz. Fresh-grated Cheddar Cheese 4oz. Fresh-grated Gruyere or Raclette Cheese 2oz. Fresh-grated Parmesan Cheese Topping - Bacon Pangritata 3-4 Strips of bacon chopped to cook crumbled 2+ Finely Chopped Cloves of Garlic 2+ Sprigs of Fresh Thyme ~2C Unseasoned Bread crumbs Preheat oven to 400º F. Thinly slice onions and melt butter in a pan. Add onions and a dash of salt to melted butter and cook, stirring occasionally on med-high to caramelize - will take 15-20 minutes. Meanwhile, bring a pot of salted water to boil. Once onions have caramelized, sprinkle 3 T flour over the onion butter mixture and stir to combine: 1-2 minutes. Ok made this with a few little changes due to what I had in my cupboard. Just used two cheeses gruyere and mature cheddar, Dijon mustard and a little nutmeg in the sauce. Didn’t do the crumb topping because we had it with ham and it was beautiful 🤩. Thanks Jamie stocking recipe will be a real go to in the future.

Biggest key to the roux do not add cheese to roux while on d heat don’t let it boil. Of all the great videos on RUclips for Mac n cheese, this the only one I found gives this important tip, to avoid the cheese sauce curdling and grainy in the oven , also use grated cheese not the bag cheese. Used another recipe but I did the onions like Jaime! 30 mins @ 350 cover with foil bang! Perfect!! 👨🏾🍳

I've learned that baked mac n cheese can basically be made with a billion different variants but the important parts are dont over cook the pasta, use 3 different cheeses and make the roux as the base of your sauce and season it to taste

I made this recipe and it was incredibly delicious. I didn't have Worcester Sauce so I just added some salt and pepper. I also added some breadcrumbs on the top. Even my family that doesn't like too cheesy recipes said it's really good. Thank you! Definitely not my last time making this mac and cheese

i made this and it went down very well. i didnt have mango chutney but i did have some horse radish sauce so i used a dollop of that. i like the idea of frying the onion to make the base sauce and will use this when making gravy like this for my next sunday roast.

Yes the addition of Worcestershire sauce and mustard ( I have used English dry or brown spicy ) is very key in my version of macaroni and cheese. I also like garlic powder, turmeric white pepper , salt and a green herb.

3 Onions

I made this just now and it was so good. The depth of flavor and texture is very different with other mac n cheese I have made before.

Parmigiano Reggiano is one of the best cheeses I've put in with mac and cheese. I splurged and bought it once for a pasta dish. I used the left over in a mac and cheese I made and it has been a massive hit ever since.

I made this recipe and it was incredibly delicious. I didn't have Worcester Sauce so I just added some salt and pepper. I also added some breadcrumbs on the top. Even my family that doesn't like too cheesy recipes said it's really good. Thank you! Definitely not my last time making this mac and cheese
Mac and cheese tip. Add the cheese sauce to macaroni not the other way around. Then you can control the sauciness level. If that makes sense lol

i made this and it went down very well. i didnt have mango chutney but i did have some horse radish sauce so i used a dollop of that. i like the idea of frying the onion to make the base sauce and will use this when making gravy like this for my next sunday roast.

Yes the addition of Worcestershire sauce and mustard ( I have used English dry or brown spicy ) is very key in my version of macaroni and cheese. I also like garlic powder, turmeric white pepper , salt and a green herb.
Oooh ill add white pepper and turmeric next time. How much did you use? Im doing half the recipe(live alone) lol
