Very similar to how I make cranberry sauce, except I usually use a can opener for mine.
🤣🤣🤣
😂😅😂
Hahaha
🤣😂
🤣🤣🤣🤣
INGREDIENTS
Serves 6
150g caster sugar
2 star anise
4 green cardamom pods, lightly crushed
250g fresh cranberries
2 apples, peeled, cored and chopped
Sea salt and freshly ground black pepper
60ml ruby port
1 orange, zested and juiced
COOKING INSTRUCTIONS
Put a heavy-based pan over a medium heat and add the spices. Allow the sugar to melt (without stirring) and turn a rich caramel colour before adding the cranberries and a touch of seasoning.
Cook the cranberries briefly so that they just start to soften, then add the apples and cook for a further 3-4 minutes. Toss regularly to coat all the fruit in the caramel.
Pour in the port, reduce the heat then stir in the orange zest and juice. Bring to a simmer and cook for 10 minutes, stirring occasionally, so that some of the cranberries and apples break down completely and thicken the sauce.
Transfer to a warmed serving dish, discarding the star anise and cardamom pods. If not serving immediately, cool and keep in the fridge for up to 3-4 days. Warm through gently to serve.
Not sure why all the negative comments. This will be my 2nd year making this sauce just as chef Ramsay shows on the video, and my family loves it! PROTIP: if you find yourself burning the sugar when caramelizing, start with sugar and add a bit of water. Its not as professional but as the water boils it leaves you with an easier way to caramelize the sugar.
Ivan how much cranberries? 12 oz bag?
Ivan Thank you for sharing your wonderful tip.
The star anise and cardamom, did you take them out?
Did you have Porto wine?
For those of you living in countries where you can't get fresh cranberries (like me - Sydney Australia) I made this recipe today. I substituted the 250g cranberries for 200g pitted chopped fresh cherries, and 50g dried cranberries. Tastes delicious!
It sounds great, though, I can use cherries only in June.
I understand the sentiment but cranberries and cherries are incomparable. You basically made a cherry jam.
Great idea
Ingredients:
1. 150g or 2/3 cup of caster sugar
2. About two to three star anise
3. Four cardamom pods
4. Small bowl of fresh cranberries
5. Two apples
6. Pinch of salt and pepper (about 1 teaspoon)
7. Port wine
8. Orange zest/fresh orange juice
EDIT//Nov. 21, 2021: you guysssss! Thanks so much for the acknowledgment. Quick disclaimer: I have no memory of typing these ingredients, but knowing me I’m SURE I tried my best to be as accurate as possible. I’m no professional, so if something doesn’t add up or make sense, please help each other or just ask google lol! Also, I’m sure it’ll be fine if you improvise a couple things(the recipe isn’t too complex). Happy Holidays and I wish you all a wonderful sauce 😊
Thank you!
Bless you (^_^)
Thanks
Much appreciated shadow girl
Shadow Girl Thank you so much 😊
Anyone here 2019 for Thanksgiving?
Yep🥰
Yes
Im debating if i wanna try this haha

Yasss although I might add some water to this so it’s not so thick
Was thinkin add more liquid. Water, apple or orange juice? Cranberry perhaps? Haha or some cinnamon. 🤔
Yup
Yep
Ay meee. I’m making turkey rn
I followed (yes guys FOLLOWED) the recipe around an hour ago and I must admit the end result tastes absolutely fabulous and I am sure it will only get better for tomorrow. As for all the negative people on here, don't worry guys as McDonald are opening 54 restaurants in the U.K. On Christmas Day. Enjoy your Mcchicken sandwich won't you.
Nah I’ll be having my cranberry sauce
Chef Ramsay's recipes are like works of art that can be eaten! Simply brilliant!!!
Merry Christmas to all!!!
Merry Christmas!
I just made this for Thanksgiving. This is the best cranberry sauce I've ever tasted. I added a cinnamon stick as well.
Caty Baha the turkey or the rolls.
Is it suppose to be so bitter?
@@RICHARD187169 no... its stupid to make a dark caramel with cranberries they're already bitter enough without burnt sugar.
@@RICHARD187169 Just because he made it look good doesn't mean it's not burned caramel shyte
@@RICHARD187169 mine tasted like candy when i used the recipe
god... i would LOVE to be at his christmas dinner party
I wouldn't - have you seen the way he treats people
Part of that (at least) is acting.
@@godschild5824 I have, he’s a very nice guy
@@IceBlueLugia :-) OK if you say so :-) I guess he is a very good actor
I love his excitement and enthusiasm!!! Love to watch him cook and the energy in his voice!!!
Chef Ramsay, I made this for my guests of 27 Thanksgiving dinner. It was the star of the show! Such flavors, such appreciation by everyone, it was truly a hit. Thank you.
This is actually one of my favorite recipes from him. Always delicious
The best cranberry sauce I have ever ate; so sophisticated and tasteful, like all Gordon recipes. Thank you, Gordon!❤️
Literally just tried it and is delicious. This is the best cranberry sauce recipe ever. Thank you chef
I have made this cranberry sauce every year since I saw this, it is literally the only way I like cranberry sauce.
i feel bad for the person who eats the star anise by accident lol
Me too haha
@swassmer440 cardamom pods
Most of his recipes are amazing, this was putrid
You tried it?
@@seguine32 Um? It taste good
wow i tried out this recipe and my family absolutely loved it! you have such wonderful cooking ideas and you are a huge inspiration to me!
Did you take out the star anise and cardamom
Looks better than the ocean spray canned crap
Just made this for Thursdays thanksgiving although I did add a lot more sugar, we like it really sweet but from the taste test I did it tastes amazing!!
Served this for thanksgiving last year... worked like a charm.
If I ever have a lot of money, I would pay Gordon Ramsay a lot of it to make all of my meals
I got the ingredients wrong, I added red bouncy balls instead of cranberries.
That would be very fresh I guess.
정현우 lmao!
Not funny at all...
🤣
mmmm...very fresh
This was 8 years ago *but I am here for it!*
Love your flavors in this delicious recipe! Thanks so much for sharing your master Skills on You Tube!
Thanksgiving 2k19 gonna be lit
How can something so simple... Make me soooooo happy :)
I'm trying this!
Thanks :)
Make this every year!!! And here we are again! 2022 cranberries sauce let's go!!!
I make his recipe for cranberry sauce every thanksgiving and Gordon, this sauce tastes amazing to me. Thank you for sharing!
I made this for Thanksgiving 2020, and while it wasn't perfect, everyone seemed to enjoy it including one relative who doesn't normally like cooked fruit.
Ive always made Rachel Ray's cranberry sauce with orange, cloves, cinnamon sticks, fresh ginger... but ALWAYS LOVE Gordon's cooking and will have to try this with apples, star anise, cardamom, and port wine...yummy
This is my third year making it this way! Love it ❤
Why does it always look like Gordon does a line of coke right before he starts filming.
ummm funny i thought we were all here to watch not to talk shit,..ri..ght..they have facebook for that sour grapes
I was just THINKING the same thing !
Because he does
LOL, are you kidding? Coke does a line of Gordon Ramsay to perk up
He's a cooking MACHINE
He is just passionate about everything he does. This is why we are here watching him cook vs. just reading the recipe :)
loving the background music! and awesome recipe!
Amazing. Thank you so much!
I’ve made this for 4 years now year round and my kids ask for it. It’s amazing.
It’s not necessary to the flavor. Sometimes I add alcohol and sometimes not. I’d say the whole anise and cardamom really make the biggest difference in flavor, as well as the caramel. I made some this week without the orange juice and with vermouth instead of sherry and it was still great.
Something I’ve learned after making it over 10x is to put a lid on it if you have trouble with the cranberries incorporating into the caramel. Mine never looks exactly like his when I add the berries-it gets hard and I end up with big chunks of caramel. But a lid on top, especially after adding the apples, creates enough condensation and steam to help dissolve the caramel chunks.
The best cranberry sauce I have ever ate; so sophisticated and tasteful, like all Gordon recipes. Thank you, Gordon!️
I made this sauce and it was so good, I couldn't stay out of it. Gordon is a genius!!!
I made it delicious. Only used one anise star.
Chef Lita to Amazing Chef Ramsay, just made your cranberry sauce and I am so happy with all the flavors. Thanks for making our Christmas that much more flavorful. Bon Apetit! Merry Very Christmas.
I make this every year BY DEMAND for Thanksgiving! Cranberry sauce used to be something no one bothered with this recipe is ADDICTIVE! My husband was very proud of me when his grandfather was literally eating it out of the serving dish at the end of the night. I always give Gordon Ramsey credit, i always get that "ohhh this is a Gordon Ramsey recipe??" Lol
Can't go wrong with this cranberry sauce every Thanksgiving! I omit the apple slices, replaced it with freshly squeezed orange juice or apple cider.
My favorite chef period
Just made it and it turned out super good. I just added maple syrup at the end for my sister.
Right, I'm making this today for Christmas lunch tomorrow. Thanks Gordy, you ROCK!
Thankyou Ramsey!! Best wishes!
So delicious and I thank you. Happy Thanksgiving
2020 Thanksgiving??? Although it would not be the same, I hope y'all have a safe and a great holiday!
Looks delicious. I will try. Thanx
My sister had made this cranberry sauce and as a cranberry lover who’s always looking forward to eating it…..this was beautiful it tasted amazing 🎉❤ then she told me she had gotten this recipe by the one and only Gordan and I knew 👌🏼 it had to be

Thank you Mr Ramsay, kitchen now smells fantastic, can't wait till later to try.

Just made this and this has got to be the most delicious cranberry sauce i ever had!
This is the BEST SAUCE! I make it every year and it’s a home run!
Make this every year so good.
Wow, thank you for inspiration on my favorite!
Love this sauce. Tastes better if it sits in the fridge a few days. The flavours mix better.
I thought I had a chance at making this
I just made this this recipe to its precision. Once it cooled down, it was EXCELLENT!!!
CAN'T WAIT TO EAT WITH TURKEY
Did you remove the cardamom pods and star anise? Are they just left to eat around?
What do you set the stove top at? Med/High? High?
@@ehale1246 you can remove the stars as you eat them, and as for the pods, I usually discard the husk before tossing it into the pan anyway and the cardamom itself should be small enough to break down and not need removing.
This will be my 3rd thanksgiving making this sauce, I love making it and it tastes so good 🤤
Can you tell me if you had to prep the cranberries beforehand , like boil them or something ? In the video his looked like they’d been half cooked or something.
@@nikkityson5987 no I only rinse them.
Is it suppose to be bitter? Or is that just the recipe?
@@RICHARD187169 no, it’s supposed to be like a sweet cranberry with a hint of spicy. If you overcook the sugar it gets bitter.
@@anilu091 how long do I cook the sugar before I put in the cranberries?
Yummy! Cant qait to make this for the family. Thank you always Chef and Happy Thanksgiving to all!❤
Wow...making today. Thanks Gordon. Yiur the best. I'm a huge cook of Italian food learned by an Italian man from Rome.
Thanksgiving 2021 and I’m trying to make this 🤩
I just made homemade cranberry sauce for Thanksgiving. I used the “Serious Eats” recipe with orange peel and cinnamon. It’s delicious. But I’ve been wondering… Yes, I will serve it proudly on my Thanksgiving table but I could never figure out what it goes well with? If it’s just a condiment next to your Turkey most people don’t eat it. This year I’m going to try something different. I am going to make homemade biscuits using a simple Thomas Keller recipe online. I’ve made them before. Simple and delicious. But this time when my guests sit down at the table I am going to first serve them hot biscuits, fresh from the oven, butter, honey, and cranberry sauce. Maybe I will serve spiced hot wine with this too. This will be the appetizer before the rest of the dinner comes out. Yes, it’s different from the typical charcuterie platter but I’m tired of sitting down for Thanksgiving dinner and already being full. Who doesn’t like hot biscuits? Anyway, I want to make the cranberry sauce the star of the show, not just a condiment people forget about. The reason why I’m posting this is I’m wondering what other ways I can make cranberry sauce shine rather than just condiment on the side? Please leave me your suggestions.
davidhunternyc this is good idea. I also use it for the days after. This is good for pancakes 🥞 and toast too
would love to be your guest omg

I made this recipe last year and my guests said it was the best cranberry sauce they had ever eaten. I'm making it again this afternoon for Christmas Dinner.
What do you set the Stovetop at? Med/High? High?
Phenomenal recipe!
Gordon Ramsay. A god of food. I'm making sauce right now
Oh my goodness. That looks good. I must make this
this looks so yummy!
Feliz Navidad 2020 y prospero Año Nuevo 2021 !!!
Whenever I hear cranberry sauce, I remember Monica's dialogue: "Enough! A monkey could've made them!"
Outstanding, Sir...
how about black cardomoms, for me they are the king of spices - wonderful chocolate, smoky, earthy, minty flavours - just use the crushed seeds and add at the end of the cooking. I'm not saying they would work in this sauce but I think its the spice of the future - essential for a proper korma for example
I'm making it right now. The 30th of December. Ready for the New Year's Eve.
This video is making me drool like a cartoon character just imagining how good that sauce will be......
Yum!
0:20 He knew what he was doing
Mr.Ramsay do you keep the star anise and crushed cardamom pods inside the sauce or do you take them out at a certain point?
Thanks Gordon
I've seen a ton of comments about this going wildly wrong very quickly.. I'm a chef and my first batch was a bit scary! Here's a missing point that is VERY important..
1. Make sure your cranberries are at least room temp or they will cause the hot sugar to seize up and get rock hard.
2. Stand back.. I have a lovely sugar burn on my face and fingers from this and I had it off the heat while adding 1/2 the berries and then folded in the last. They will start to break down and the acid will cut the sugar.
3. For me, the large slices on the apple are too big. My second batch I sliced and then sliced again, to about batone size.. think a large match stick. The apples breakdown faster and the finished presentation is much more attractive.
Overall.. I love this recipe. Use a good port.. fresh OJ with no pulp and keep your distance when adding those cranberries!
This is going to be devine on a turkey.. and turkey sandies!
Enjoy and Happy Thanksgiving 2020!
i warmed my cranberries and my sugar still hardened, and additional tips to avoid this? or ways to bring it back?
@@garrettwhite0051 mine did, to a lesser degree as well. Keep cooking band adding the rest of the ingredients. The acid that is released from the cranberry breaks the sugars down and the hardened sugar will create the sauce. Hope that helps.
What's a non alcoholic substitute for port?
@@munibaiqbal3648 great question. You could use some pomegranate juice. I think that will provide some depth of flavor with the alcohol.
I’m not mad at RUclips recommendations 😍
Hey everyone.. I make this EVERY year and it’s always my showstopper. Make it.
Yum
I loved it but the next time I make it I will eliminate the zest. It made it a little too tart for my taste. Also, don’t forget to remove the Star Anise and the Cardamom before serving.
Maybe maybe make more caramel sauce.
Amazing !! Used to buy a jar, but never again x
I make it every year 8-10 batches takes a bit of time which i give to family and friends they all love it, lovely on the turkey sambos , I do mini portions bout 200g and freeze and use during the yr when havin turkey 😊
BEAUTIFUL. What a fantastic way to improve my simple recipe. I'm a happy vegan!
