New and Improved How to Make an Enchirito

- A year ago I made a video about making a Taco Bell Enchirito. To say it was a hit is an understatement. The comments were amazing and many people pointed out a few flaws in that video. I went on a quest to make the MOST authentic enchirito I could possibly make. Here it is. Enjoy!

Traders and even aldi(la tortilla co) has a type of mixed blend tortilla. Little thick bit might give the nostalgia.
Good to know. I have not seen them here at traders. Maybe it is a location thing. I will look again though.
HtoC(e) - I was looking up something slightly associated with this vid of yours, so RUclips recommended I take a look, and since I had never bumped into your channel before, I did.
My first compliment, pertains to your delivery of banter. Anytime I get a giggle or chuckle from such, I consider it a success. You made me laugh numerous times, which is why I'm giving you a thumbs up, as you earned it.
At risk of sounding like a food snob, I am not. While my mission at most times, is to make all things from scratch (example, all the ingredients you used, including the cheese), I am also respectful of how to use readily available, prepared foods, in pursuit of an easier method, to much the same effect, as you did with your Enchiritos.
Between 1985 and 95 (abouts), I lived within 2 miles of a Taco Bell, being my home away from home, at least on drunken Friday or Saturday nights, as the wind blew, and within walking (or stumbling/crawling) distance. Most of the menu (as just the re-orchestration of the same 5 or 6 ingredients, masterfully done), cost between 49 and 99 cents. There probably were more expensive items (in the $1.29 - 1.49 range), but I didn't know about them. Point being, I don't recall ever seeing the Enchrito. So, they were either a higher priced item on the menu, or came along at a latter date.
However, at the same time, within an even shorter walk, crawl or stumble, there was a Mexican restaurant. A smallish storefront place, probably 20 tables at most, but with wait staff, and things normal of a restaurant. The food was very good, and quite cheap, with most of it, being made in house. That was the last time I've had a 'true' enchilada, as approved by an Argentinian woman I knew at the time.
Anyway, I was looking for a recipe, to make what resembles, your store bought tortillas, half corn (for flavor/texture) and half wheat flour, for gluten and flexibility. I've made them before, but I need to perfect them, being my journey, that has brought me to you.
So, I didn't get the input, or the info I was looking for (as your channel is not about those sorts of things), but I did have a good time, and it did provoke some thoughts in me (regarding moles and types of cheese), so win/win. Well done, and thanks.
Thank you so much for your very thoughtful comment. I love the feedback. I am always looking to expand my skills and making tortillas is something I have been working on. I'm not quite there yet to be "teaching" anyone how to do it but I'm practicing. I will be making a batch of these hybrids very soon and if it turns out I'll shot a vid as soon as I can. They are so good! Thanks again and I'll try to keep the banter pithy.
Finally someone who has done the Enchirito correctly…….it was never with a flour tortilla. Always sliced black olives. I made hundreds of them. Metal tray with a plastic top yes, but they weren’t heated up or steamed. For your friends you’d add a bit of extra taco meat in the tray.

Yes, metal tray and you must have olives on it. Three olives, not 2 and not 4, but 3. As a side note I think the enchilada sauce is too rich. I need to find an alternative way to make the taco bell red sauce. Made the Chilirito yesterday with the mild taco bell sauce. Awesome!

I want a bigger one. So I'd be all over the Burrito Size Flour Tortilla. I've never cared much for what people think about me. I'm from the generation where you eat what's made or you go hungry. The enchirito video was how I found this channel. I've made it many times for my kids and they love it. Going to have to hit up my local HEB and pick up those tortillas. Thanks for the update.

Interesting about the steamer being the reason they stopped the enchirito AND the mexi-melt. Interesting to me because those are 2 of my 3 favorites of all time from Taco Bell. grrrr... Chilito was the other one in my top 3 favorites. I wonder why they stopped offering the Chilito. 🤔
Yeah, when it takes so long to steam an item it really slows the whole thing down. Instead of fixing the problem they just nix the item. Not a great business idea IMO. Maybe they need a better steamer or another way to do it? Corporations aren't great at finding good answers, just easy ones.

What brand of red sauce do you use? That is the missing link for me. I read somewhere that adding a half a bottle of Taco Bell mild red sauce to a can of enchilada sauce gives you that Taco Bell taste but haven't tried it yet.
It's the Hatch brand. It is thick enough to match TBs red sauce and has almost the exact same ingredients. Adding the mild sauce to most enchilada sauces would probably be a great idea but would be overkill with the hatch stuff. It's really close to their red sauce.
You did fine in previous video!!! But you missed the olives! LOL

Thanks. I know the olives ruin the food but I couldn't take another round of "Where are the black olives?" I redid the mex pizza video too. I think you'll get a kick out of that one, hint hint.
