How to Cook(e) w/Bill Cooke is a seriously not serious cooking channel. Pretty straight forward really. I have worked in restaurants and my passion for food has taught me even more over the years. These are just some of my favorite recipes and I thought I'd share them with you. Of course, my personality gets in the way sometimes so buckle up. This can get weird!
Now please forgive me, I suck at the camera thing and editing these videos has been challenging. I'm figuring it out slowly but I'm not a pro and it's just me so.... you can't expect much. As I edit the videos I see the humor in it and after crying a little inside I can poke fun at myself a little. Life would hardly be worth living if it weren't for humor! Food is about more than just survival, or at least it should be. If you can't laugh at yourself, someone else will do it for you! Eat, Laugh, Live, Repeat!

My New Favorite Recipe! Chorizo, Potato and Egg Breakfast Enchiladas
My entire life, I thought nothing would ever top the Chorizo Breakfast Burrito. I was wrong. I still love it and for portability, nothing will ever take it's place. When it comes to flavor though, this recipe wipes the floor with it. The combination of flavor and textures in magical, I really mean that. This is greater than the sum of it's parts. Please, make this recipe at least once. You have to know what this tastes like. Enjoy!

Looks dam good, Bill. I worked at Numero Uno in El Toro in 1977 for around 2 years. As you mentioned, we got the dough frozen, so we didn't know the recipe. Morning prep would put a ladle of oil in the pans, put the frozen dough in and let them thaw stacked on the work bench. After they thawed, we'd stretch the dough in the pan similar to how you did it. Then they'd go into the walk-in until they were ready to bake. At the time I worked there, we made the sauce. It was a pretty typical traditional Sicilian pizza sauce. As you mentioned, it was a heavy herb sauce with a lot of oregano and dry basil, garlic powder. The tomato sauce was just tomato sauce, no chunks or seeds. It wasn't cooked. Building the pizza was sauce first, then cheese, then toppings and every pizza got a hand full of diced tomatoes on top before it went into the deck oven. About half way through the bake, we'd tilt the pan around like you did letting the juices run into the hot pan. When we pulled it out of the oven, we'd brush the crust with olive oil and cut it with a pizza wheel and cut the crust with the metal spatula that was served with the pizza. Some time in the 80s they stopped using sauce and started using diced tomatoes with herbs and putting a layer of cheese on top. It was ok, but so much better with the sauce in my opinion. I've also experimented making a copycat dough. It has to be a sturdy dough, so super enriched dough won't quite cut it. My closest dough was a standard 60% hydration pizza dough with bread flour, 25% potato starch for the crisp surface and 12% of sugar. Also, it went from frozen, thaw and rise in the same day at the restaurant, so I add around .5% active yeast. Think Pizza Hut pan pizza, but sweeter and crisper.

Looks good. Rosarita refried beans have a nasty aftertaste. The best refried beans in a can I ever had was Old El Paso brand. They tasted like the restaurant refried beans, but they only sold them in the grocery stores for a short while in the early '90s.

Those packets are not made by TB. It is a completely different recipe. The McCormicks taco seasoning is actually closer to the correct recipe. It just needs the lime juice...
Thanks for the low hydration dough demo. I've been making 65% hydration pies and wanted to experiment with other rates. There are many 80%, which done right are outstanding. Your 50% dough is closer to New Haven style which I'm trying to achieve. Sorry, but they use much better quality sauce and cheese. I just want to make a few with your recipe, but I think it'll be too "Cracker Like". Overall a great video to learn making and working with low hydration doughs!!!

I ate a boat load of these back in the day, I loved them. I remember the outside was light and crispy and the filling was just well. from what i can recall just all blended together. My daughter gave me a steel for Christmas because I had it on my Christmas list however, after it arrived, she showed it to me and she says “mom I’m not gonna give you this for Christmas. It’s too heavy for you.” (75 yrs old with bad back) I had not looked at the weight of it when I put it on my list and it was 18.11 pounds, she was right so she returned it for me which was lovely. I have since ordered a pizza stone and it is supposed to arrive tomorrow. lol can’t wait to try out your recipes. Love your humor

I loved the 7 Layer Burrito when it existed, and the Taco Bell that was located in the mini mart three miles away did it to perfection. Then Taco Bell pulled their units out of mini marts and the standalone Taco Bell store ten miles away never did get it right.

I remember the burritos from the 70's. I think they had 3 flavors - one was bbq. I lived in Dallas a couple of years ago and the one thing I always got was the Breakfast Jack Egg, ham and cheese on a bun and you could get them all day. They taste exactly the same as the 70's. Loved it when it was extra greasy.

HE'S BACK ! ! ! ! This recipe reminds me of a dish my aunt's first husband used to cook - it was (I think) hash browns, sausage, and scrambled eggs all mixed together.
I have made this with sausage, bacon and even chicken but the chorizo was the real break through. The flavors just pop!

Their pico is just diced tomato, onion, cilantro and some lime juice so it's really easy to make. Baja sauce had two different recipes. Pink and white.
