Yup life was good.
Hi Catherine! I made these for dinner yesterday & everybody enjoyed them & wants more of them in the future. I added chopped Cilantro after the meat & onions were 1/2 cooked. I wanted mine baked. I covered them with Enchilada sauce & cheese and baked them at 350 Degrees F. for 15 mins. covered & 15 mins. uncovered & sprinkled Cilantro on top. With a little over 2 pounds of ground beef, mine made 13 fully loaded Enchiritos. Thanks🙏🏻 so much.

I like the crunch of raw onions. On our burrito night all the ingredients were shredded, or sliced , or diced and put in separate bowls for everyone to pick their own ingredients...green taco sauce and sour cream to finish it off. The kids loved to create their own !
LOVE IT! I worked at a Taco Bell in high school, late 70's. My favorite thing on the menu? Enchirito! Was not happy when it went away. Now I don't care I'll make my own! THANK YOU!

@@n.b.925 The Enchirito was never made with corn tortillas. It was made with specially colored yellow flour tortillas to give the impression of corn tortillas. The only corn tortillas Taco Bell used at that time were the ones fried for taco and tostada shells.
Tried a couple of the Enchiritos they brought back in November. Totally different flavor than the original, and didn't really care for it. Definitely will try your recipe at home.

The enchirito is made with red sauce at Taco Bell tastes different then the old elpaso sauce worked at Taco Bell for 13 years the beans have no seasoning in them the hamburger does though and they don’t use olives anymore but this is a nice recipe I tried it and it tasted pretty good I just pu the sour cream on the top of the enchilada but thanks for the recipe
Taco Bell made a huge mistake in getting rid of the Enchirito.....so disappointing.....but, Catherine, thank you so much for the recipe. I'm so excited....going to buy the goods to make my own! For those of you who are wondering, we all grew up eating Enchiritos from Taco Bell. Hey Catherine, how about the Bell-Beefer? That would be fun to make!
I love enchritos. They had them here for a short time where I live. One thing I miss is the bell beefer. They should bring that back like McDonald's brings back the Mcrib..

Well done! I am sure everyone will love these. I'm all about garnishes and loved the olives, cilantro. I think when I make them, will add chopped green onions and fresh tomato over the top as well. I have always loved Taco Bell, but the portions have gotten smaller, the prices dramatically higher. Pretty sad when Taco Bell is not affordable. I have watched your videos, but broke my arm on the 9th and holy pain! Not convenient when you run a small farm. That is why I have not commented. Take good care and thanks for your wonderful videos.
The first time I ever ate one was in the 70s. We had a Taco Torch in town, and I was in love. I make them all the time. Very easy to do, I add lettuce and tomatoes too
The Enchirito is my FAVORITE Taco Bell item!!! I hate that they took it off the menu! I guess they brought it back but I got the notice on the 29th saying it was just til the 30th! I didn’t get a chance to go. They used to put olives on it-my favorite and now there is no olives on anything! I will definitely try your recipe!

A tip to get stuff like beans out of a can, open the top, flip the can and puncture the bottom with a sharp knife tip and blow in the hole. Works great on chili too!

Tip! To get refried beans out the can easy, on the bottom of the can make a hole with an ice pick. Open top side with can opener. Pour out with ease.
