  • Deulgireum Makguksu
    1 portion soba noodles
    1 sheet of seaweed, toasted until crispy on a dry pan
    1 tbsp toasted sesame seeds, grind
    2 tsp yondu, Korean fermented veggie sauce
    2 tsp matganjang, Korean seasoned soy sauce
    1 tbsp Korean wild sesame oil (deulgireum) or good quality toasted sesame oil
    *Yondu & matganjang can be substitute with Tsuyu, Japanese noodle soup base
    *My Matganjang (Korean seasoned soy sauce) recipe - seonkyounglong...
    *Yondu can be found at Korean groceries or amzn.to/3EP9kxY

    Oh yeah this thing is BOMB. FutureNeighbor shared his recipe a while back and I decided to give a try and it was absolutely delicious. Perilla oil is fabulous.

    I've made something like this a few times since last summer. I saw a recipe on yt and it's actually using perilla oil, it's called "Deul-Gireum-Mat-Guksu" but since perilla oil is nowhere to be found where I live, so I'm using toasted sesame oil like you do. And it was amazing!

      I used deulgireum, wild sesame oil that my mom brought from Korea. And yes, that's the key point of this recipe! But good quality sesame oil will do the job too!

      @@SeonkyoungLongest Deulgireum is perilla oil made from perilla seeds.
      From what I know, sesame and perilla are not the same; and yes I’m Korean too LOL

    There is something about cold noodles that I just cannot do. They look great, but the thought of eating cold noodles gives me the heebs

      It's just because you weren't raised for this to be "normal", just like how a southerners in the us diet (pigs feet, neck bones, gizzards, chitlins, etc) might also be considered foreign (or even gross). Suspend your beliefs for a second and just give things a try even if they sound odd! I've noticed that adults (because there already have fairly established beliefs and opinions on things) have a harder time trying new things. But I always say, if we're telling/expecting toddlers to try thing that to them are crazy foreign, even if it's just some asparagus, why shouldnt we hold adults to the same standard

      soba are delicious. i highly recommend trying them when it gets to be super hot outside.

      @@heyitsjustme.680 that's a little different. soba have a very different texture to ramen noodles from the package. they are more springy and not as spongy. and it is less "room temp" cold and more "toss an ice cube in there" cold. like, deliberately cold.

      things like soba, naengmyeon, etc are honestly only good when they are cold, taste and temp give a very nice cooling flavor during summer. different noodle dishes taste best based on different temperatures. very different from most ramen. i 100% recommend.

      There's no meat or animal products in any pasta so yes of course it's vegan

      The solid ingredients was just soba noodles, seaweed, and sesame seeds
      Liquid ingredients were yondu, seasoned soy sauce, and sesame oil

      its probably sesame oil I have. better recipe for you if you want... sesame oil,oyster sauce, a dash of honey and then you fry them after cooking and sprinkle them with sesame. If you like you can add MSG, chilli powder or sri racha mayo but I think they are fine the way they are. best with mie noodles, have fun its my own creation,about as uninventive as this one lol

      It's a very common thing to do for Asian cold noodle recipes! It makes the noodles chewier. Great texture!

      @@randihigginbotham5070 No problem! 😊 I've also seen this technique used for hot noodle dishes as well but it all really depends on what kind of texture you're going for. My family rinses our noodles with cold water before adding hot broth on top! It just hits different for some reason 😂

      다른 영어권은 모르겠지만 미국에선 메밀국수를 soba noodle 이라고 부릅니다.

      우리식으로 영어로 적어둬야죠 왜 한국음식을 소바라 적어놓는지 싶어 그런겁니다.
      그나라 음식 그나라 이름 그대로 영어로 표기해야죠. 초밥이 일본어 그대로 영어로 sushi 스시인것처럼
      우리 짜장면도 blackbean noodle 이런게 아니라 jjajangmyeon이런식으로 적어야 하듯이요
