This is the closest to the Osoba I used to eat almost 60 years ago in Misawa and Iwakuni. But we had the egg (coddled not poached) separate and dipped the buckwheat noodles in the egg
The miso is the main seasoning base for this. Without it, you’d probably need to find some very interesting chicken broth or build the recipe up with more ingredients.
If you’re gonna say this, at least say that you should rub them with a dry cloth as well so people don’t think you’re stupid. Also…. Most likely this is her cultural food. So her, her family, and many other generations before her have been making these types of foods for years, washing their mushrooms. So how’re you, a random lady that doesn’t know her or her family, gonna come in and dictate her how to cook her own cultural food (if it wasn’t her culture…. It’s her recipe). I bet you’re the same type of person who tell people not to wash their chicken even though we’ve all been doing it in our cultures for years and we’re all still standing.
