I find it amazing the joy and inspiration people have from their work. Something as simple as noodles and this gentleman treats it as serious as a heart surging would. I honestly thought this day and age, people use machines to make noodles. Its refreshing seeing someone take pleasure in handmaking their own meal such as this.
I realize now that it's not just food, the person who makes it puts their heart in it, That's what makes it so good. It's just like art, you make your own version of a recipe and try to bring people together around it.

What amuses and equally fascinates me about traditional japanese is everything is an art. Everything that is done is a specialty and isn't done without purpose. Something as simple as making noodles is taken extremely seriously, made in a Gi, practiced for 8 years and the individual dedicates their life to it. Its noodles.
Idk why but this made me cry. I was so lost in my life recently on the verge of finishing high school, going to college and deciding on my career. This reminded me when I was a little child how I always said I want to be a chef. Maybe now it's time to give my best and follow that dream of creating great food. 😭😭

Full disclosure here: I found this video looking for recipe videos to prepare Japanese Buckwheat soba noodles on my own at home, for my personal consumption, not even for showing off my cooking skills to friends or family. I watched this video, genuinely curious and interested, but as it went on I developed a true admiration for this man’s approach and dedication to his art-I was literally in tears by the end of the video. Seeing his philosophy and technique in making the noodles, I cannot now simply cook my noodles however I wish, I feel compelled to treat them with the respect they deserve as the work of art that they are. I have been a practitioner of the art of bonsai, on and off since I was a teenager, but have taken it up again in recent years with a greater passion for the art than in my youth. Watching this man display his art, philosophy, and technique truly struck a chord with something deep inside my soul. I don’t want to sound melodramatic about it, but, this man is truly an artist, and this insight into his art has impacted and inspired me in my own.
