Honestly, I had forgotten about the recipe until a friend asked me to enter a seafood contest at the Maritime Museum....I didn't enter, but remembered this family favorite! And I love it!
I use individual porcelin au gratin dishes...they are small and shallow and can go into the oven. and also the freezer for future meals. Any shallows pan will work ....cast iron should work, or any baking dish
The sherry is well worth using it as it adds a beautiful flavor and aroma. Sherry is cheap and available wherever liquor is sold. I bought mine at Vons, 5.99 and it stores in the refrigerator forever!

Instead of cheese, can use 1tbsp of corn starch.
Corn starch is not a substitute for cheese
