- Creamed cod was one of my favorite childhood comfort foods, mostly because my mother served it over mashed potatoes, which was my favorite childhood food of any type. This version is a little fancier than my mom’s, but still very easy, and can be done in individual portions, or in one large casserole dish. Enjoy!

My eight year old has a hard time sleeping unless I put on Chef John for her. She says his voice just helps. And she loves cod and is wild about potatoes, so it all works out, which is nice.

Made it today with cauliflower mush. It was so delicious, so creamy with lots of flavors, like at top notch restaurant. My husband immediately after finishing his, asked if we have more, and after finishing added: “it is one of the best fish dishes I ever had”.

Oh my, what an incredible comfort food. The fresh tarragon with the lemon zest and the touch of cayenne pepper is a heavenly combination.This is delicious.

Cod is my favorite fish, and I’m always looking for recipes with cod that aren’t fried or battered. I made this tonight (dill replacing tarragon, and adding black pepper), and it wasn’t just the best cod recipe I’ve made, it was one of the best meals I’ve ever made (and I’ve been cooking for more than 50 years). I served it with some fresh homemade coleslaw (cabbage, carrots, diced apples), and peas. 10 stars. My husband literally licked his plate clean. LOL
I’ve made this twice now. It’s superb, it’s easy, and it’s the tarragon that pulls it all together. A simple green salad and it’s a complete meal. You can’t go wrong.

This sort of reminds me of an Icelandic dish we call "plokkfiskur"...roughly translated it means "picked fish". We traditionally use leftover white fish (usually cod, otherwise haddock) and potatoes, along with some onions and seasoning in a roux. Often you take the finished product, put it in a dish and add cheese on top (gouda is the most used and widely available in Iceland) and broil for a couple of minutes 😋
Try it with some raw cheese if you can get it, much healthier then Gouda. Even dutch people prefer other cheeses then Gouda 😂

I love Chef John AND I love seeing this kind of response, because it takes me to places I've never been and sadly probably never will be. I am just now planning on my version tonight - I'll be adding prawns (shrimp?!), because I'm Aussie and what to do with these leftover prawns I bought! ;)
Your Icelandic dish is what we call Fish Pie in uk. We may add other ingredients like prawns and salmon along with the cod/haddock.
This combo initially sounded odd to me, but boy o boy does it look uber delish🤤
Typically 'Cod au Gratin' is simply cod in an herbal or cheesy cream sauce with a crisp bread crumb topping.

I just made this tonight. Delicious! My husband brought a bunch of fish home from a trip to Alaska so I'm always looking for new recipes. I used rockfish instead of cod because that is what I had. My husband says I need to make this again. 😊

Chef John! Yaw dah best!!! I've been copying your recipes from meatballs to biscotti and everything else for quite a few years now but somehow didn't try this one until today. But my wife said this was divine, the perfect comfort meal for a cold rainy evening.
Just made this in individual disposable aluminum loaf pans for the family. It was a hit! One thing I found to cut the richness was a healthy grind of black pepper over each serving. Nicely done!

Yummm, this sounds so good. I’m obsessed with Norwegian fiskesuppe (you must use Atlantic cod) so I think I’d love this. I couldn’t resist adding some dill here...

I made this exactly according to the recipe (with dill since I couldn't get any tarragon) and it was excellent. Since I needed a first course today and had some cod left I made it again, but replaced the lemon with a 1/4 cup dry sauvignon blanc and a teaspoon of fine Dijon mustard. I put a big tablespoon of the potato/butter mix in each of 4" ramekins, added about 1 oz. of cod and some thin sauce, then spooned on the reduced sauce and added a nice layer of Parmesan. The dish is so rich a small ramekin is more than enough as a first course. I can really recommend this recipe. Thank you, Chef John.

If anything, Chef John allows me to correctly pronounce gratin as 'gruh-Tahn'. Useful!
Unfortunately, that’s not the correct French pronunciation at all. There’s no sound similar to the French final “in” in English. The closest I can come to would be gra-teh. No voiced N.
