Recipe:

Step 1: Old Forge Stuffed Pizza
* Pizza Crust
* 511 g bread flour
* 306 g water
* 10 g salt
* 15 g sugar
* 5 grams olive oil
* 3 g active dry yeast
* ¼ cup peanut oil
* 1 small white onion, thinly sliced
* 6 oz frozen spinach, wringed out of all its moisture
* 1 ½ lbs cheese (White cheddar, White American, provolone, mozzarella)
* 1 tablespoon dried rosemary needles
* 1 tsp garlic powder
* 1 tsp black pepper
* 1 tsp salt
* 1 tsp oregano
* kosher salt
* Bottle of olive oil
1) Stretch out one of the dough rounds on the pan with oil covering the pan.
2) Add the cheese. Add the onions. Add the spinach.
3) Mix the garlic powder, pepper, salt, and oregano. Sprinkle half the mixture on the top of the cheese. Reserve the rest.
4) Add the top layer of dough. Seal with your hand. Drizzle some olive oil over the top. Sprinkle the rest of the spice mix.
5) Add rosemary leaves.
6) Bake at 400 for 16-20 minutes or until golden brown.
Equipment
* Square pizza pan
* Small spoon
* Large spoon
* Pizza cutter
Step 2: Colorado Mountain Pizza
* 4 cups whole wheat flour
* ½ teaspoon salt
* ½ teaspoon black pepper
* 3 tablespoons honey
* 1 tablespoon olive oil
* 1 tablespoon instant yeast
* 1 ¾ cup water
* Pizza sauce made with honey
* Mozzarella cheese
* Pepperoni
* Salami
* Spicy italian sausage
* Canadian bacon
* Meatballs
* Chopped bacon
* Red onion
* Green peppers
* White mushrooms
1) Remove for the bowl and stretch out on pan.
2) Cut a fingers length slit into the dough. Begin to braid the dough.
3) Add tomato sauce, cheese, and toppings.
4) Bake at 470 for 10 minutes.
5) Remove from the oven and top the crust with honey.
Equipment
* Round perforated pizza pan
* Knife
* Large spoon
* Pizza cutter
Step 3: Pizza Montanara (Fried Neapolitan Pizza)
* ½ teaspoon sugar
* ⅛ teaspoon active dry yeast
* 1/2 tablespoon olive oil
* 2 cups double zero flour
* 1 tablespoon kosher salt
* Crushed tomato with sea salt and garlic
* Pecorino
* Buffalo Mozzarella
* Basil
1) Heat up oil to 375 degrees in a large pan. Remove the dough from fridge and shape into a round.
2) Add the pizza to the oil and fry until golden brown.
3) Add tomato sauce, pecorino, and mozzarella.

* Basque style dome pan
* Bowl of flour
* Fry oil
* Pizza stone
* Pizza paddle
* Pizza cutter
I really appreciate the fact that he accidentally made the mountain pie correctly by adding toppings before cheese and then more toppings after that because that’s exactly how Beau Jo’s does it.

I'm from Denver and this is like the first time I've seen my local cuisine called out on RUclips. Thanks Josh. If you ever find yourself in Idaho Springs, I definitely recommend stopping at Beau Jo's. They also have a absurdly large pizza eating contest there for crazy people.

Idaho Springs is in Colorado because "Idaho" was a weirdo conman's proposal to name the then-unnamed Colorado Territory. It obviously failed, but the town adopted it anyway before "Colorado Territory" became official. The state of Idaho is named after Idaho County, ID, which is in turn named after a Columbia River steamship called "Idaho", which may or may not have been named after the weird proposal. If you've ever made a pan pizza, you put enough olive oil under the dough that it basically DOES fry while in the oven and makes the dough and especially the cheese edges crispy and awesome.
Yes! Cast iron pizza is delicious for this reason, especially if paired with a long-rise, no-knead dough.
@@michellebowen1194 I discovered the magic of cast iron pizza recently, and I'm probably never going to make pizza any other way. There's no need for a special oven, and the cast iron can be used for a bunch of other things. You get that slightly fried crust and incredibly crisp without burning the toppings.
I'll just buy the dough ball, sauce and cheese most of the time and it's done in roughly the same amount of time as one of those frozen pizzas, but significantly better.
I was thinking that fried pizza was a lot like if you took focaccia bread and put pizza sauce and mozzarella on top.

There's a pizza shop near me that makes regional crust styles. They make a Montanara crust. The texture reminds me of crispy fried wonton skins. As such, I highly recommend an Asian inspired pizza on this crust. You're welcome.

I get upset when people don't like the crusts ... But personally where I'm from our famous local pizza is terrible to me 😅the crust is like a fortune cookie but worse

As someone who moved to Colorado 20+ years ago, can confirm that it's pretty much just Beau Jo's doing the "Colorado Style" pizza. Everyone else takes the classic NY/NJ route.

I live 30 min north of Idaho Springs, Colorado. You eat the mountain pizza point first then when all you have left is crust you use the honey. C'mon Josh.

there's a regional dish from where I'm from (Bedfordshire in England) called a Bedfordshire Clanger, its basically a sausage roll with a savoury filling in one end and a sweet filling in the other - the Colorado Mountain style reminded me of it, would love to see it get made on this show lmao

Being from Colorado, mountain pie is definitely something that no locals actually eat. And Idaho springs is a cute little town just 30-40 minutes west of Denver.
Also the home of Tommyknocker Brewery!
The Scottish deep friend pizza can be made one of two ways.. Just simply deep fry the pizza, or coat it in batter then deep fry (Crunch) - Ps Brown Sauce is simply what we call "Steak Sauce" - they may have slight differences but by and large the same.. so yes.. Coat your deep fried battered pizza in steak sauce and enjoy.. its glorious

The reason why Idaho Springs is in Colorado is because Idaho is a made-up name and some of the folks who wanted to use it as a state name because they liked the sound of it settled in what would become the Colorado Territory and founded Idaho Springs, thus making it predate the Territory and subsequent State of Idaho.
Josh has Pennsylvania on the mind lmao - Old Forge and Eat N Park (Whose omelettes are good but like it's an omelette from a small chain fast casual restaurant so like maybe they have the World's Best Small Chain Fast Casual Restaurant Omelette, but I don't consider their omelettes especially notable in the grand scheme of omelettes)

Chef Scherer, I spent 4 months deployed to Italy, and travelled almost every region. I have not heard of any off these regional styles. I am truly impressed.
As a Coloradan, I can verify everything Josh said about BoJo’s is 100% true 👍🏻
Dear Sir, as a native Coloradan, a 20 year career chef, and a Beau Jo's fanatic, you did a massive disservice to the uniqueness of the Colorado mountain pie! Yes, the honey is in everything id's massively important, and putting it on the crust afterwards is the best dessert ever. But the true detail to this local dish is the sequence of building the toppings. They put the meats FIRST, then the sauce, then veggies, and cheese LAST. No other pizza style does it this way, even chicago style which is the closest comparison, but doesn't even come close in comparison...
All that to say, thank you for spotlighting this amazing local beauty and bring awareness of the best pizza style ever to the masses!

As someone who worked for Papa Murphy's, watching you take forever to braid that crust made me appreciate for the first time that I have a unique skill. I haven't made a stuffed pizza for like five years now, but I'm sure I could still bust em out quickly.
"Old Forge Pizza" sounds inherently awesome. The name conjures an image of using an abandoned steel mill as your pizza oven.

So this is the latest mythical kitchen episode on Snapchat and I just watched it. So I’m actually from a small town just outside of old forge in Pa and it was really exciting to see it represented here. So yes, it’s a real place. Old forge is actually a really small town but the pizza style that originated there has leaked into a lot of the neighboring small towns that make up the Wyoming valley. Most popularly, Alfredo’s Pizza Cafe from the office, in the neighboring city of Scranton, is old forge style pizza!
Oooh-you should definitely showcase how countries try to recreate other countries signature dishes. I lived in Guinea (West Africa) and Their ‘spaghetti’ was most DEFINITELY noodles wish fried onions, some oil, and ketchup…
When he mentioned the pizza crunch I have never felt more validated. He did forget that we dip the pre-made pizza in batter before frying, because we're disgusting in the most delicious way in Scotland 🏴

In the New England area "fried dough" is considered a fair food. You can get it with marinara or cinnamon and sugar. I always wanted to make a pizza at a fried dough and now, now because of you, now I know it would be epic. I truly know it would be epic.
